Spyro 1-3
Crash Bandicoot 1 and 3 (didn't find anything new in 2 myself, it was very similar to 1, in my opinion, but some people like it so play it if you like Crash 1 I guess.)
Ape Escape; an all around fun game, I think its aged well and I love its soundtrack.
Croc: Legend of the Gobbos (if you can find it, I haven't seen it around in awhile, I'm glad I still have my copy.)
Tomba/Tombi (if you can't afford/find the ps1 version its pretty cheap off the PSN, and really worth playing.
Medievil, wasn't GREAT for me but still good and worth playing.
if you were a Digimon kid; Digimon World (not for everyone but if you like that sort of thing its enjoyable.)
Rayman 2, I never played the first so I can't say about that one, but Rayman 2 is fun, fairly challenging (or at least it was last time I played) and has an interesting varied world.
Legends of Legaia has a massive world and a pretty good story, it falls a little flat at the end but this is still one of my top 5 ps1 games.
Jade Cocoon is again not for everyone. Just a warning though the beginning of the game is basically all talking and pretty long.
Kula World/Roll Away, which is trippy as hell and really fun to play. This is also on PSN from memory. I think original copies are pretty expensive now.

These are all the ones I still own and play on my ancient PAL ps1 (its right from when they were first made and still runs better than my ps3 haha), some may not be your sort of thing but each to their own.

I had no idea that was on PSN, result!

I maintain that Vib Ribbon is an excellent, simple PS1 game, and worth owning. Seems it was sold everywhere but the U.S. so I had to chip my PS1 and get the Japanese version. You being in the UK, you've had access to it all along:
Kind of expensive used though.

Also: Metal Slug X, Metal Gear Solid, Crash Bandicoot (1 through 3), Crash Team Racing, Medievil, GTA 2 and Silent Hill (probably crappy by now, though).

Nope :(

Although you can use a USA account to get it. I've still got my import copy from way back when so I'm good and yes it's a terrible thing for it to never have come out here. As I was saying further up, IMO the best games of the PS1 era never came out in the EU. Chrono Cross, Parasite Eve, Final Fantasy Tactics, Xenogears, Valkyrie Profile. We got none of them.

Yeah, Final Fantasy 9 is actually better than 8. You can kindof see the influence it has on other FFs though, (how there are billions of different talking creatures that have no purpose other than to be "unique") but FF9 actually does this well.. It's FF10 and 12 that use it pointlessly.

That is... so sad. Parasite Eve and Chrono Cross too? That's horrific? What did people in the PAL region play?! Other than American copies of those games, I mean.

I know right! Chrono Cross was particularly annoying and part of the reason I imported in the end and it turned out to be one of my favourite games of all time.

Oh we also didn't get Einhander :/ and I LOVED that.

I'm not gonna cross reference, so I'll probably mention a couple of titles already mentioned in past posts.

Metal Gear Solid

It's a pretty cinematic game, and might just get you into the franchise as a whole. It's a top-down stealth game with storywriting only found in Japan. Seriously, what the fuck? It only gets weirder the further down the series you go, but the games are still pretty damn tight.

Tenchu 2: Birth of the Stealth Assassins

A 3rd person stealth game with a focus on exploration and ninja tools, rather than sci-fi and vision cones. Never played the first, but if the second one is any indication, it's probably pretty cool too.

Breath of Fire III/IV

Hell yes, just about the greatest JRPGs ever released. They pretty much go with this whole setting where each game takes place in the same world at a different time, with recurring themes and stuff. Also, dragons. And none of that pansy-ass Skyrim stuff, I mean real hardcore dragons, with different forms and abilities.

Tomba and Tomba 2

Also known as Tombi around Europe. Sidescrolling platformer with quests and exploration. And what appears to be a pink haired troll as the main character. Pretty decent all around, but the load times and the jump physics in Tomba 2 drive me mad. Still worth a peek.

Ape Escape

These games were massively cool, and the first one on PSOne was a really good play. The game mechanics allow for some very memorable moments- and for a game about catching apes, that's a decent result.

Final Fantasy VI

It's a remake, but if ya gotta pick a port, the PSOne version is a very decent play. The story is quote gripping and the combat mechanics are very simple, yet fun.

As a side note, just about anything Squaresoft released during this era is a decent play. I saw someone mention Vagrant Story, but really all their stuff is good.

It's come up a few times, but definately try Wild Arms, if just for the soundtrack.
