If you want to start with the latest doctors, Christopher Eccelston or early David Tennant are the ways to go.
I like Matt Smith, but I think the writing has gotten worse this past season, so you don't want to start with him. It's a shame because I think a lot of the dislike of Matt Smith has less to do with his Doctor character and more to do with the story (far too much River Song, not enough random aliens).

Probably start with the new ones, starting in 2005, i grew up on the originals so i lvoe them, but a lot of fans of the reboot dont like them (which doesnt stop them declaring matt smith the greatest doctor ever despite only having watched the latest 3 doctors for no real reason).
