Two words and I only saw two guys posted it so it must be reinforced!

Demon's Soul's. It's relentlessly difficult and a HELL of a great game.
Zero hand holding. The intro tells you all you need to know about the story, and the game leaves it there. Everything else you find out on your own. Not to mention some of the best online i've ever seen, not to mention probably one of the best games on PS3. If you like RPG's, you should definitely get it.

Almost everything else has been listed. So... uh.... yeah. Good hunting for a new game!

OH! Before I forget, Nier was actually a decent game that I liked quite a bit. Can't remember how many hours I put in, but it was definitely more than 4, and I enjoyed it thoroughly. May not be worth buying, but I think its worth at least renting.

Unfortunately, the PS3 version is a rushed console port. You're better off getting the PC version of the Orange Box, which actually works and has plenty of free updates.

Exclusives I would recommend are inFamous and Uncharted 2. Killzone 3 seems pretty good from the demo.

Assasins Creed 2 and Brotherhood (I've never played 1 so can't recommend)
Mortal Kombat

Those are the games I've had the most fun with.

That's a pretty wide range of good games, look into any of them further to see if you'd like them or not.

Demon's Souls is great but by no means should you get it as your second game. That's a game for seasoned gamers.

The HD Collections aren't a bad place to start. Granted they're just dolled-up old games but $40 for three games versus $60 for a single new one isn't that bad of a deal.

Assassins creed is good, so is Heavenly Sword, although the latter is a bit shorter on gameplay than I would have hoped.

The games already listed are all good. And as some people suggested look on the PSN Store, they have a good amount of old PS1 games that are worth looking at.

The only games I can think of that haven't been mentioned are Brothers in Arms: Hell's Highway(little buggy at times, but good) Yakuza 3+4. Haven't played 4 yet myself, but if you don't mind a game that is very Japanese, dated graphically, and subbed then it is pretty cool.

You don't, Orange Box (PS3) is shit.

I recommend Oblivion, Bayonetta, Devil May Cry 4, Mass Effect 2, Dragon Age 1-2 and Dead Space 1-2.

Quite a few PS3's are backwards compatible.

Red Dead Redemption is probably the best game I've ever played. Also Undead Nightmare is great too. Other than that Far Cry 2, Super Street Fighter 4, and Portal 2 are also excellent games.

I am in the same boat as the OP; I got mine as a graduation gift. However, I'll note that most new PS3 systems (the cheaper ones than the launch version) are not backwards compatible. I think they can play PS1 games, but not PS2.

I currently have LA Noire, MGS4, God of War 1+2 collection, and Red Dead Redemption.

I'm considering...
Demon's Souls (though I'm not sure what I think of a game that doesn't give tutorials; sounds mostly frustrating, not fun)
Uncharted 2 (I sort of wonder if I'll only play it for its SP and not again)
Resistance 2 (just to have one solid splitscreen shooter on the PS3)
Ratchet and Clank Future: Tools of Destruction OR A Clank in Time (I don't know which is better)
Heavy Rain (If only for morality reasons; I watched a full playthrough online, I know who the origami killer is, and now I don't really know what enjoyment I'd get from it, but I feel I owe the devs money. The playthrough even showed a number of alternate versions of events)

I don't easily shell out a lot of money for a game unless I have already played it, so I'm mostly buying the many reduced-price PS3 classics that I had been missing out on while I was a PC gamer, and leaving the $59.99 purchases to the fanboys.

I also need more games that can be played with two controllers in splitscreen. Any ideas?

If you can handle a brutal game that really punishes you and kills you off when you do something dumb, I recommend Demon's Souls more than any other game. Defeating enemies by something that is NOT just random buttonmashing is a fantastic experience. If you don't like the sound of that, here are some other recommendations.
3d Dot Game Heroes is a fantastic tribute to the Zelda-games (Espessially A link to the past and the very first one)
MGS4 is yet another good Metal Gear game. You already want this bad if you've played through the others. If not, I recommend getting the first one from PSN first, and playing that.
Uncharted 2 - Even better than the first. Lara Croft used to rule the world of third person adventures, but drake has apparently dethroned her.
Heavy Rain - While it has it's flaws, and the plot isn't perfect, it's still a very nice interactive experience that you won't get anywhere else.
God of War 1,2,3 - Start from the first one and enjoy these superb 3d hack and slash games. This is an experience you really should not miss.

As a lot of others said, games like Ratchet and Clank, Modnation, LBP and Resistance are also supposed to be great exclusives.
