Actually, not very.

Make no mistake, you will spend the vast majority of your time killing redcoats and Conner is very definitely on the side of the colonial rebels.

However, it doesn't get all in-your-face triumphant about it. I don't want to spoil anything, but there are some developments late in the game that are... err, not exactly flattering of the Americans.
This. Tbh it's more of an "yeah, everyone's a bit of a douchebag" game.

Why is it everyone always assumes that just because a game has characters that are either American or interacting with Americans they will always without a doubt be running around waving the American flag screaming out the lyrics to "Star Spangled Banner" while uppercutting a Nazi and eating a cheeseburger?

That's really starting to annoy me. Especially when it's seen how Americans really are.
In the case of ACIII i think it's more because it takes place during the American civil war and has you rubbing shoulders with practically everyone who is considered historically important from that time, i.e. Thomas Jefferson, George WAshington etc. Myself being non-American it's easy for me to think the game will be like "Whoa, weren't these guys great and revolutionary and badass", as it usually seems to be the case when americans are talking about their important historical figures.

I haven't played the actual game, but it would seem that is not the case, which is good.
But that's the thing it's not an American made game. It's made by a French game studio based in Canada. There's no reason to automatically think it's going to be a boast about our supposedly great founding fathers. Who were in truth a bunch of outcasts and crackpots.

It's openly critical of many revolutionaries, particularly Washington, and while the Templars do tend to be prominent redcoats their motivations usually don't turn out to be straight forward. There's a bit outside the Animus too, where Shaun argues in favour of the crown. To be honest, I really liked the way they handled it, the trailers looked a bit suspect but the game itself is fine.

As Shaun in game delightedly notes to you: this was "Brit on Brit action". There is no 'America Fuck Yeah' anywhere in this game.

think of it this way
if you only play the story missions and don't kill anyone outside that
Redcoat fatalities: probably over 200
"Patriot" fatalities: 4

If you can ride a bear while in the same time use a rocket Launcher to make a rocket-jump......yeah, I think I would said AMERICA F*CK YEAH!!!!

But of course this is not possible in the game.

Not at all really in my experience, but I'd ask you to prepare yourself to be disappointed by several other elements of that game.
