I recently finished building a an island in the sky, which I'm still working on, adding a bed and some furniture to the place, and growing lots of sugar cane to make a books for the library, all on a multiplayer server. Its been really fun. Its got a water elevator up to it and everything.
Offline: working on my FarGates to create a universal travel system to new bases. Using the teleport function to find the new trees and ores that the last patch added.
Online: Finished my Ranch home on top of a mountian, now working on a undersea base, and finding a way to connect the two.

Massive cart system going from island to island. Originally it was just a cart going from my spawn point down into a massive tunnel to my house which was a fair distance away. Got really sick of creepers. Problem is just finding enough iron, I've actually come across more Diamond than Iron.

I am creating four elementally themed dungeons for players to navigate, with rewards for completion.
I just last night made the Tower of the Gods from Legend of Zelda Wind Waker in Classic mode (I'm going to do it in the beta next). Here's some pictures. I need to expand the water around it but I'm not too concerned about that right now.
Massive tunnel network with the objective of biulding above ground minecart systems with the further objective of making more tunnel networks.

Lately I've been doing D&D (Basic/Expert) modules - to scale. I've just about finished "In Search of the Unknown," and "Keep on the Borderlands" is next on the list. I'm so happy Notch added dispensers - it makes traps awesome.
