Where you play a newly recruited Spectre.
You can choose between human, Asari, Turian, Salarian, and Quarian for your race. If you are human, Turian, or Quarian you can choose your gender (since Salarian females never leave their world, and Asari only have a single female-like gender).
And you get sent off on some sort of Spectre mission that is more than it first appears. You probably spend some time recruiting help in the form of a new batch of party members, ones whose loyalty you must manage in some fashion or other.
There's also Garrus' days in C-Sec, Kasumi's various pre-ME2 heists (expanding on the heist gameplay and making it a team effort with Keiji could be neat, especially if it were coop), or simply playing as a human explorer in the uncharted worlds. Maybe even a strategy game around the expansion following the discovery of the Charon Relay. Wouldn't mind systematically kicking batarians off as many worlds as canonically possible, myself. Well, this isn't Digimon or anything like that.
