My perfect companion?
I'd say a female, romancable dark elf, primarily uses a bow, with a personality much like Kasumi from ME2.
Yeah, I'm that specific.

Honestly, I want a mammoth. you see the ones roaming the plains with the giants in the gameplay demos and i really just want to toss one a steak and put a collar on its neck and start calling it Wolly.

Oh, here's an idea how about one that won't die in 20 seconds and fuck up all my atte3mpts at a stealthy entrance.

Bethesda is bad at making me like the NPC's in the same way Bioware or Valve do.
They don't offer any gameplay help besides the a fore mentioned 20 seconds and they never have a personality that makes me want to keep them around. I've played Oblivion for over 1000 hours and never once used a partner (When it wasn't scripted)

A little child who sees himself as my squire, so he carries my shit, repairs my shit (just a couple of percent a day or something, he doesn't have to be an expert :p) and as he's my squire he's learning the skills I am, so if I'm stealthy he'll be equally as stealthy, if I'm not he's not. He would primarily mean he's a big backpack that's as stealthy as me :D

I would like something akin to Mordecai's bloodwing in Borderlands. Something that can help you out in a pinch and is awesome, but doesn't get in your way. I prefer not to have people following me around wherever I go.

Since I'm a rogue/thief I could use an apprentice so I can have him/her do the easy work. Such as just pick pocketing people to get me funds and stuff of some value. Also come in handy when raiding a supply room and theres to much to carry.

The only kind of companion I want is one that's a competent thief, or rouge. I hate when I'm trying to sneak through an area with a companion and I get spotted because the idiot decided to go Leroy into a group of enemies. That said I think I'm gonna do the same thing I did in Morrowind, Oblivion, and FO3, and that's run solo, I hate companions. And yes, even when Behemoth hunting in FO3 I refused to have a companion help me, I can take a den of enemies out more efficiently by myself than with help.

On the other hand, if it allows for some sort of co-op, I will definitely be helping/being helped by some of my friends. A two player co-op thing (second player would need to get slightly nerfed stats otherwise it would become unfair though) would be insanely fun to do IMO.

That would be amazing! Just a little dragon, about the same size as you, maybe a little smaller, which follows you around everywhere! I would love that!

In one of my playthroughs he was eaten by a pack of trolls, while I was doing a Fighter's Guild quest. The weird thing is, he came back.
Then I told him to wait in the middle of nowhere and left him.

Well according to rumors they are putting in Love interests, or at least romanceable's. And friends. I honestly can't think of one I'd want though as I don't know what I'll be playing as.

None. I prefer exploring by myself, especially as I tend to go for sneaky characters in this kind of game. The last thing I need when sitting in the shadows poisoning arrows to take someone down without anyone else noticing is some overly enthusiastic sidekick alerting every single guard in the world.

Yes and yes; conjuration produces very useful companions and J'skar would be useful, especially if he could go invisible on command and stay that way until told otherwise; would make for some great stealth combat.

I can't say I really feel the need for a companion honestly; my issue in Bethesda games is that by and large, my companions have no understanding of the words 'stealth, 'passive' or 'cover my six'; far too often they're charging some hundred meters up a hill to attack a nest of deathclaws which had no idea they were there (that actually happened to me in New Vegas whilst I was attempting to avoid it; curse you ED-E!); if I'm going to have companions, I'd prefer them to stick close, only attack what I attack and preferably warn me they see or hear an enemy I don't.
