Probably the dozens of different tower defense games. Most of them offer some new twist, however subtle, to keep them interesting. And they're pretty mindless ways to kill time.

Honestly, Runescape. Make fun of it all you want, it's an addicting browser game. And most of the time it's fun, too.

Well, right now, I'm on my third hour of Doodle God, and it's pretty awesome, but is getting boring.

Overall though, I would have to say Level Up! You can level up practically anything, just by doing anything (like walking around, or jumping). It's so good at keeping you playing too. Most fun I've had with a browser game.

Probably Endless War 3. It's a great series of flash games, and Endless War 3 allows you to play ever level from the first two as well as the new levels with all of the weapons and various gameplay upgrades added in the third.
