If you have a lot of time to kill, Final Fantasy XIII may be a good investment.
But when I say a lot of time, I mean a lot.

The Orange Box would be pretty good, as long as you can cope with having Team Fortress but not being able to play it.
Not sure I could handle that...

Mirrors Edge, The Orange Box (Portal and HL2 are great even if you can't play TF2) Assassins creed (both of them), L4D (both 1 and 2 and though are good online, can be equally fun offline), Fallout 3, FF13...the list goes on

Can't believe nobody said Ninja Gaiden 1 and 2. I mean, come on... If you gonna play an Xbox 360 game, play an exclusive game.

I've had lots of fun with Brutal Legend and Darksiders. (For more ideas that haven't been mentioned yet).

Also, I'm told CoD4's single player campaign is very strong for a multiplayer-focused game.

Assassin's Creed 1 and 2, Bayonetta, Bioshock, Dead Space, Mass Effect, Miror's Edge, Fable II, etc...

To add one that's not been mentioned, Resonance of Fate is one of my absolute favourite games. But if you're not very into RPGs (it's got both Japanese and Western elements, by the way) then I suppose it wouldn't be very good.

Go with Dynasty Warriors: Gundam or the actual Dynasty Warriors itself, that's gonna take awhile. Warriors Orochi (part 1) is a good one too, if you get all the characters (in part 1), you're basically getting a full list of achievements to your xbox profile! Easy stuff!

Other than that Fallout 3 (with Broken Steel) is an instant favourite. I love play it all alone ...

Metro 2033, Dirt 2 (if you like racing games), Star Wars: The Force Unleashed, Alan Wake, The Saboteur, Guitar Hero (insert random number here)...

Most of which i recommend have already been said.
Here's some that (i'm pretty sure) havn't been mentioned: Splinter Cell, Resonance of Fate, End War, 'Splosion Man, & Castle Crashers (great local multiplayer game!)

Still to reinforce what people have already said, you should get Mass Effect 1&2, Fallout 3, Red Dead Redemption, Fable II, Arkam Asylum, Oblivion, Tales of Vesperia.. oh man there is a lot actually.

That's a nice list!

And, yes, I quite enjoy RPGs to those who asked - those were actually some of the first I thought of that would be good for 360 offline only, but I wasn't sure how much else there would be.

I dunno about Red Dead, the online play was one of the aspects that really appealed to me.

The single player is amazing. It's a cowboy simulator where you mosey around the old west doing cowboy shit. I mean, there's an achievement for hogtying a girl and leaving her on the traintracks.

Oh I realise that, and if I were to only have a 360 I'd probably go for it, but I'm planning on getting a PS3, so I'd rather just wait as the online component of it really looks worthwhile.
