Well in the games and books, whenever a species is mentioned, they never start with a capital letter.

For the same reason we don't capitalize Lions, Monkeys, Eagles, Humans, Butterflies.

^ this. They're not proper nouns / scientific names so it's correct for them not to be capitalised.
