I know it's silly, and know it has absolutely nothing to do with anything in the main plot, but mind is:

"Cut to the left. I'll take the leader." This is the one I say the most. Bonus points if you can tell me who said it without looking it up. Others include:

"Red Three, Red two, pull in."
"Got it."

"All wings report in."
"Red Leader standing by."
"Green Leader standing by."
"Grey Leader standing by."
"Lock S-foils in attack position." (Mainly because it's the start of the battle, and I get chills every time I hear it).

I have a thing for the space combat. Can you tell? Now, if we were including books, tons of stuff from the X-Wing series, and Mara Jade has a good one in Specter of the Past or Vision of the Future:

"Would you like to get off of me know, or were you just getting comfortable?"

Gotta be Wedge Antilles. I know it wasn't Luke, and I don't think anyone else in the squadron had significant lines. (Porkins' "I've got a problem here", "I can hold it", and "AGGHH--"*explosion* don't count)

My favorite Star Wars Quote comes from the X-Wing series as well, but it comes from the novel Iron Fist.

I can't find the quote, but it is the whole exchange between Zsinj and his adjutant about New Oldtown where he calls it "The town whose name is never again to be mentioned."

Plus, who could forget this one:

One of my roommates was reaching for something in the far cabinet when he said something to the effect of "I need to get closer."

So my other roommate said: "At that close range, we won't last long against those Star Destroyers."

And I finished it with, "We'll last longer than we will against that Death Star, and we might just take a few of them with us!"

I always thought the line

"Luminous beings are we, not this crude matter."

from Empire Strikes Back was probably the deepest and most meaningful in the entire series. It is a beautiful statement, delivered perfectly, and I think it strongly influenced me as a child (when it didn't really make sense to me).

Edit: "Die wunna wanga" from Return is a close second.
