I think those have all been mentioned, well maybe not Rio Bravo...

Dead Man, Jim Jarmusch's twisted little Western with a dark and moody Neil Young soundtrack is a perfect meld of Jarmusch's eclectic style and the Western.

...and of course Deadwood. See why there is so much deserved hype about Ian McShane.

I second every person who mentions Kurosawa. Yojimbo is better than any western I've ever seen.

If you're dedicated to watching cowboys and stuff, everyone else has mentioned most of the classics. I'll also recommend Treasure of the Sierra Madre, which I haven't seen but have heard good things about. It has Humphrey Bogart in it, which can only be a good thing

I hope it's already been mentioned, but The Outlaw Josey Wales is probably my favorite western.
Red Dead Redemption borrowed a LOT from it, among others but Outlaw seems to be the primary donor.
