Flow, Flower and Journey.

All three for PS3. All three calm and serene games with a relatively slow pace, forgiving difficulty, great aesthetics and non-violent nature. Coincidentally, all three made by the same dev: Thatgamecompany.
Beat me to it. But I suppose those games define serenity and calmness in gaming for me.

Europa 1400 - The Guild.
It's a fairly old game where you build a family dynasty in medieval Europe. It's pretty slow paced, in depth and incredibly calming.

Also, whilst the game itself is all kinds of infuritaing, I always loved the pause screen from Anno 1602.

A few people have said it but I'll support it even more. Journey Journey Journey! I really cannot say enough about this game. Some people say that it's just trying to be artsy and is just a stupid game, but it's honestly such a great game. The soundtrack is beautiful (on my iPod), the gameplay is very relaxing and can be completed in a few hours. It's amazing.

Crayon physics Deluxe is a very calm puzzle game, much of it has to do with the music.

I say get Minecraft, it's like 30 bucks now, and I swear, i've dumped over 1,000 hours into this game. I use it to relax. You could play on peaceful if you want, but it's really not that bad on easy or normal if you want a mild challenge. The multiplayer is really quite good, with economy mods, a mod that lets you level up skills like mining, herbalism and whatnot. Or you could go the casual adventure map route, and some of them provide some pretty interesting stories and mechanics. If you don't care for the retro look, you can get texturepacks that make it look however you like, or make your own it you're picky. If you don't feel like playing on servers, then you still have more than enough mods to suit yourself once you get bored with normal mode. This game is about doing anything.

Harvest Moon is probably the most relaxing game you'll ever play. The world does not rest on your shoulders, Very little dialog trees to interact with. All you do is farm, hunt sometimes, and build relationships with towns people. Pick a system, there is probably a Harvest Moon type game on it.

Really old, but: Have you tried playing the King's Quest/Space Quest series? They're decent enough.

Most Turn-Based Strategy games will fit your description pretty well, as well. How about Civ IV? (I've heard that Civ V is a lot more action based, so yeah...)
Age of Wonders (1 - 2 - Shadow Magic) (again, really old) is pretty relaxed, too.
You should look up the word "churlish" before you do anything "stupid".

There are also the modern monkey island games on steam, worth a look. Heck, go get dosbox and a copy of theme park. Can't go wrong with the classics.
Bloody hell, it took me a while before I could remember where exactly that quote came from.
"You have to ask yourself... Do I feel lucky? Well, do I, punk?"

And I agree with him. The Monkey Island games are even more relaxed than the SQ/KQ series, because you simply can't die. (Well, with a couple of exceptions. For example, if you stay under water longer than 10 minutes...)

Dark Souls... Haha, nah I'm just kidding.

Maybe Minecraft if you play on peaceful mode. -Or one of the Lego games.
No, actually Dark Souls is fine, I spent so much time in this game and I have a couple of overpowered Thieve-Mage characters, so it shouldn't be so much intense. That "Knight's honour" trophy and the Knight Solaire's covenant is a couple of unfinished jobs that I have left and I would like to finish some time in the future.
You seem to be a fan of civ and fantasy so i advise you give Warlock Master of the Arcane a go. It's like the bastard child of warcraft 3 and civ :) i love it to bits and its very relaxing.
