If you like Simulations instead of Arcade games then I would say DiRT (The first one), Forza 2 or 3, and MAAAAAAAYBE Grid.

If you like Arcade racing games Burnout Paradise was pretty good. But if you can get a hold of Burnout 3 (best in the Burnout series imo, but I don't know if it was released for the 360) then play that instead.

It's a toss-up between these two racers on the N64: Lego Racers and Hot Wheels Turbo Racing.

Paradise was horrible, really. You can infinite-combo at the tunnels by crashing, roll, roll, roll, roll, to the other end, blow up, roll, roll, roll, back up the tunnel, blow up, repeat. I did just that for over an hour on one combo.

Burnout 3 was the top of the crop for the Burnout series. If I had to vote for my favorite "driving" section of any game, I'd say Reservoir Dogs, because it was just simply hilarious at times. For a driving-oriented game that you could free-roam, Driver 2 for the old ps1, god I miss that one. Does the original Grand Theft Auto games count as driving?

There's two I'd point out. The first is Race Driver: GRID, which sits on a balance between arcade and sim quite nicely. There's plenty of tracks, cars and disciplines from demolition derby to endurance racing at Le Mans to Formula 3 open wheel. Its the only racing game thats made me go back well after I've finished career mode just to try and beat my lap times.
The other one is Test Drive: Unlimited. Its more of a driving game than a racing game, but I loved jumping into whatever supercar took my fancy (Aston Martin DB9 or Lambo Murcielago most of the time) and going for a spin on this massive island in Hawaii. The racing is OK, but the game conveys the simple pleasure of driving fast cars really well.

otherwise get Gran Turismo 3, Burnout 3: Takedown, NFS carbon and Simpsons:hit and run.

Burnout Paradise is one of my faves. Put over 100 hours into that game, which is incredible for me.

If you don't like the idea of Burnout with an open-world though, then go with Burnout 3 or Revenge.

For Xbox, I'd say GRID or DIRT, both have extremely fun gameplay and the handling on the cars is great. Collision enabled game modes online are an absolute clusterfuck too, which is awesome. I played the Blur demo also, which was good but no racing game ever justifies a 40 quid price tag. I only ever buy them when they're like 10 quid. They might be fun but they don't feel like full games.

If you have a PC, I recommend the racing mod for Unreal Tournament 2004. Old, but still the best racing game I've ever played.

Well, I'd say GRID is a good choice for Xbox.
Although when I feel like racing I always have my Playstation 2 lying around with Burnouts 1-Revenge...
They never get old.
