I'm going to have to go with BlazBlue in this, if you want a specific game then BlazBlue: CSE. I find that 's more-or-less balanced with a good amount of characters with various styles. I think everyone would find a character who's style they like unless they're excruciatingly picky.
Bushido Blade, it´s like playing StreetFighter with the last drop of health. Every hit counts and could cripple or kill you. Loved it.

I love Ultimate vs Capcom 3.
It's everything I love in a fighting game. It's fast paced, user friendly and just incredibly fun and competitive.
No other game would give me the chance to have X-23, Vergil, and Amaterasu in the same team
Yeah, I LOVE UMvC3! I don't really go online on it that much due to a crappy connection and massive imbalance in the fights but I still have a whirl of a time playing Offline. It seems to be that every week or so I try to create new teams with different themes like Team Merc (Deadpool, Iron Fist, Taskmaster) Team Spaceman (Nova, Rocket Raccoon, Super Skrull) Team God (Thor, Shuma Gorath, Amaterasu) or Team Can't Be Arsed Walking (Doctor Strange, Nova, Magneto/Storm).
I would say UMvC3 but you said 1 on 1 fighters so... I'm gonna go with Super Street Fighter IV Arcade Edition Version 2012, I'm still playing it and loving the complexity of it all
there's also Blazblue but I won't put it above SSFIVAE2012 simply because I didn't get into it until Continuum Shift Extend came out

Best fighting game - Ultimate Marvel vs Capcom 3. It's just so much fun to play, and there are so many great combinations of characters that I will never find them all. Nothing better than pulling off an amazing air combo that can cripple an opponent.
Favourite fighting game - Mortal Kombat 9. I haven't played it in a while due to the fact that only one of my friends has it (and hates playing it because I win too much), but the fatalities and the all out bloodbath is just oh so satisfying.

Probably Soul Calibur 2 or DOA 2/4. Soul Calibur started to go downhill after 3 (and don't even talk to me about 5), whereas DOA continues to improve -- very excited for DOA 5.
I will throw my hat into the Tekken ring. 5 is my favorite one, and 6 is also awesome. I think 6 would be my favorite if I owned it. But my friends and I still have competitions on Tekken 5.

Obvious choices are UMvC3 for the high levels of She Hulk and Phoenix Wright and Smash Bros Brawl for Dedede's rocket powered hammer.
My other choice is Soul Calibur 3, which had all the fun of the first two but then threw in the mildly broken create-a-character builds which were fun to infuriate people with.
