Halo turrets are probably the best; the stationery turrets were perfect for slaughter if often in terrible positions most of the time in Halo 1 and 2. Halo3 broke this by allowing you to carry it around with you - if you like the chance to play the game in third person! The Gauss Cannon on the Warthog in 2 was much less useful than it seemed; vehicles were often moving too fast (particularly your own), while the magnetic field produced by the shot betrayed the rather small blast area!
Gears of War turrets were alright... in the sections where you were almost always forced to use 'em. Otherwise they were pretty crap - playing the last chapter on hard mode I was forced to climb up to the top of the train and fight off hordes of those flying buggers. Rather than use the turrets provided I hoarded all of my sniper shots and Torque Bow shots 'til then and fought them off by myself in cover. Lousy turrets usually killed me at this difficulty...
A mention was reserved for th turrets in Nightfire, a modestly fun James Bond game for the GC. They ranged from brilliant (explosive superheated plasma shot blast... turret) to utterly useless (a pretty cool looking minigun if impossibly inaccurate and weak that required victims to stand still 'til they died)...

The Timesplitters 3 turrets. I made a level with the map creator where there was a normal fighting arena with turrets hanging over it. If one of the players could find the secret passage they got to be in a control room where they could radio control the turrets and shoot the other players with darts, rockets, etc..
I agree with everyone who said the sentries from TF2. I love those things. Hell, all of the turrets from The Orange Box are great.
the unreal tournement turrets in the assault levels especially overlord on godlike you better be quick on the buttons or its shreaded witha machine gun or nuked by the mortar.
I love those Space Marine listening posts in DoW - I think I'll give that one a vote since a lot of others seem to be getting quite a bit of support (although, can't really disagree with them.)

I was also rather fond of the progammed portable one on HL2... I was very reluctant to let them go. The battleship cannon on Battlefield 1942 was also rather satisying, if hard to hit things with. I think I managed to down a plane with one once. Had me chuckling like a pervert.

The enemy turret encampments in CoD2 where quite good. Especially in the level on the Normandy beaches.
Portal turrets. "Are you still there?" "I don't blame you." On a side note, am I the only person creeped out by the turrets?
Hahahaha, GeoW's Troika. Not only are you invicible when you enter it, you can only be killed from the side. God, that Mansion Mission still gives me nightmares...
