I do love the HL2:EP2 turrets where Alyx is damaged, and you have these guys and their turrets helping you out. Gotta love those drawings =D

Recently? The turret sequences in F.E.A.R. 2 were quite fun, if a total time of less than 5 minutes all-together...

The Halo series turrets are fun to use, too, especially with the third's option to dismount it and "Jesse Ventura" it around. That can be very satisfying in single player and multiplayer. The Gears "Troika" bits are fun too, as are the turret sequences in Armed and Dangerous.

The Killzone anti-aircraft turrets are pretty awsome. Ratchet and Clank's turret glove too was 1337 I loved using that gun so much. L4D's mini is good too, super high rate of fire turning zombies into red mist... Mmmmm zombie smoothie

OT: I enjoy the Grinder from Gears of war 2. Why stay in one spot when you can take the turret on the go.

Yeah. I realized it was probaly posted that far back a couple of minutes later. I just didn't think to remove it. But now it is. He's probaly comed to better thoughts. no need to remind him of it =P

FPS:

Most games had them in terrible spots or only put in for the scripted campaign level...Though BF1942 had some in good places, I think.

I'd say my stationary turret vote goes to BF1942, and my deployable goes to either the Spitfire from Planetside, or the deployable plasma cannons from Tribes 2. Probably the latter.

RTS:

Human Guard Tower - War3. I'm serious, it and the sorceress might as well be the only thing I made.
Obelisk of Light - (AWESOME, AWESOME, AWESOME)
Tesla Coil - (see Obby)
Photon Cannon - Who HASN'T abused these...cannon rushed...fended off a horde of lings...

But above all...

Big Bertha - Total Annihilation. Why? Most gun emplacements can win you the game if you support them with other units while making them in your enemy's base...or if you rush, making them in your enemy's base.

This one can win you the game from across the map. Most badass artillery cannon I've seen (unless you count TA 2 SupCom, which has another awesome one, but this one gets the nostalgia factor.)
