New Vegas: Jack of all trades/ Energy Weapons (9 INT + implant b4 level 3, all skill books, Intense training x 5, Comprehension, Educated)
Currently have maxed Lockpick, Sneak, Science, Energy Weapons, Barter, Speech, Repair, and almost Medicine at level 26
So yeah I get to be awesome at everything... I can live with that.

Oblivion. A custom class with Conjuration, Illusion, Marksman, Armourer, Bllade, Block and Hand-to-hand (the last three are just abilities I never use, because I didn't want to level every three seconds, just get the major skill benefits from the first four).
Actually that'd be pretty fun, turn invisible, be able to use a sword and bow, fix things using only a hammer, punch things to death and summon minions of hell to do my bidding (though my morals do mean I'd never use the mind-altering abilties of illusion except in life-or-death situations).
