I played a bit of Mass Effect last night, but only for about 10 minutes, and I only talked to Legion and walked around the Normandy, so I don't think that really counts. Before that it was probably Daggerfall, I downloaded that a few weeks ago and it is damn fucking good.
Although most games I play have RPG elements to them so its hard to really say.

Dark Souls, I've beaten the game almost twice, and if it wasn't for another RPG that's out right now which I won't mention, I'd probably be playing my third run right now. Truly one of the best "balanced or balanced as it gets" RPGs out right now

Jade Empire - Oldie But Goodie which I enjoy a revisit from time to time (Hint Hint BioWare >.<)

Fallout New Vegas - Which is sad because I was in the middle of the story line with 2 characters, will I ever return to them to finish there story?

I might be crazy, but the last RPG I played AFTER I got Skyrim and milked it pretty hard, is a JRPG. Which is one my most hated genre along mumorpuger and "simulation + social network".

Its Recettear! I love Recettear, the story and gameplay are simple and good, it has adorable stupid characters, but most importantly, they did not try hard to be cool (and JRPG being JRPG, fails miserably) and sacrifices the general adorableness of Japanese games.

The original Fallout. I've had some issues, but when everything is actually working, I've found it quite enjoyable, and the beginning is supposed to be the worst part, so that's encouraging.

I've actually played that more recently than Skyrim tbh. My parents and siblings camp the TV all day, and even when it's available I have to split playtime with my brother.
