Haha, this was back in undergrad, quite a few years ago, but basically we weighed a brick, used that to work out the weight of the pillar (as in downward force not mass), then worked out which bricks would cause the smallest change in the vector of that force. Once it started getting high, we had to work out which bricks had the lowest force acting on them (the ones that are easiest to remove).
In the end I think it was coordination and balance which brought us down, it could have kept going, but it's really hard to put a brick EXACTLY where it needs to go and your error margin gets smaller as the pillar gets higher.
