The sun reflects your alignment(Renegade or Paragon). Cerberus has nothing to do with the sun burning up.
Preserve civilization from what? Yes, it seems that the Reapers are using organic material to create other Reapers BUT the minds of those "organics" are not preserved. When a new Reaper is created, the minds of all the organics that were sacrificed to create it do not merge into a higher mind that gives life to the Reaper.
The Protheans were the most advanced civilization in the Galaxy and when the Reapers came they ended up being indoctrinated and turned into mindless drones with one Prothean serving has a "direct controller" through which Harbringer could then control the rest of the drones. That certainly was "preservation".
If they were trying to protect civilization from some sort of "attack" then they are doing a pretty bad job. The Reapers themselves are so technologically advanced, they're better off advancing the technology of the species living in the galaxy. Reaching the technology levels of the Reapers is quite something to be hold. Even so, it doesn't make sense as to why they turned the Protheans into what they are.
Are they trying to protect us from some imminent disaster? If so, which one? The only disaster that can occur is the Milky Way colliding with Andromeda but that's 5 million years from now(or then).
I do agree that the Reapers have a higher purpose BUT preserving civilization or protecting civilization from utter anihilation because of a certain cosmic event really isn't it (It wouldn't make sense to turn the Protheans into mindless drones the Reapers barely even cared about just to protect them from something).
