According to Jack Thompson and his ilk, the paddles represent the desire every gamer (yes, even those who play Peggle!) to kill/rape/generally do bad stuff, and the gamer's conscience telling them not to do bad stuff.../jk

Classically you'd have to go with Mario, probably moreso than Lara Croft or Sonic...but for today's generation it would probably Master Chief or Gordon Freeman.

I'm going to have to go for the fallout avatar. I forget his exact name, but any one that's played any of the games knows who I mean. I'm pretty sure he's the embodiment of the term 'mascot'

Tell that to the Middle East gaming group, which is using GameBoy CLASSICS. If I see DualShock, the two bar things, I'm like, "Eh?" But the Control Pad + is instantly recognizable.

I'd say Gordon Freeman or maybe Pikachu.

Pac man. Mario is too much of a caricature; he would be a much better mascot of the Italian plumber's league.
