Hi hi, RobCoxxy here.
It's that time of year when everyone begins there annual migration into University accomodation; and I thought I would start my bid to help improve the usual student diet of Frozen Ready Meals into something a little more homemade, more healthy, and an arseload less expensive!
Basically this thread can contain anything. The genuine, the helpful, the experimental, the illegal, the hilarious, the lazy. You name it. I'm going to try and stick to a budget of £5-6 British Pounds, the equivalent of Five Euros or $10-12, on meals large enough to feed an apartment/house of four, or keep one going for seconds, for two days straight.
First off I'll fire recipe I know and love.
Robs' Bloody Awesome Chilli
Ingredients:
Beef Mince
One Onion
One Green Pepper
Chilli Sauce (or) Spice Mix
Tinned Chopped Tomatoes
Kidney Beans (rinse before use)
Rice
Pitta Bread
Nacho Chips
Recipe:
Fry beef mince - (do not add any oil to the pan, it'll fry on it's own) on a ring on 4/5. You can add chopped onion & pepper.
Once it's cooked (Mince brown, Veg soft) add a jar of Chilli Sauce or a packet of spice mix, along with a tin of chopped tomatoes and a tin of kidney beans.
Now turn the ring down to 2/3 to keep it simmering, without burning the mince.
Bring a pan of water to the boil, add half a mug of rice, and stir frequently to avoid making the rice cling together. Keep the heat just right so the water bubbles gently (not boiling).
After 12-15, test. If the rice is good, drain and serve with chilli that should have entirely warmed through while rice cooked.
Served with Pitta Bread, Nachos and/or Rob's Awesome Cheesy Nacho Salsa Stuff (see below, c.o. Robs' girlfriends' mum)
Robs' Bloody Awesome Cheesy Nacho Salsa Surprise

Cheese
Salsa
Recipe:
Add a layer of nachos to the bottom of a microwaveable bowl.
Sprinkle cheese and add salsa dip to layer.
Repeat until bowl is full.
Microwave until cheese melts.
Serve with spoon.
Eat.
