Theres nothing better than beating someone to death with their own skull. And if thats not physically possible, i prefer the use of a sniper rifle. Any variety, except the ones of the battlefield games. I suck with those.

Someone has already said it, but the Battle Rifle is my go-to weapon in Halo 3's multiplayer. I'm generally not a fan of the responsibility of having any of the special weapons so roaming between cover with the BR is my favoured tactic.

The scouts Bat in Team Fortress 2. I have a KD ratio of 20:1 using it.

In ANY fps, An ambushed melee. I'll hide behind a corner and and wait for them to turn around then POW right in the kisser.

The Plasma Coil in Ratchet & Clank 3. Has a quite decent amount of ammo and is capable of wiping out every single enemy on the screen with one or two shots. It's just such a butt-saver.

The Dishwasher: Dead Samurai's katana.
Stabby? Yes.
Slashy? Yes.
Has the cheap dash-slash thing every samurai does for dramatic effect, and which Ryu used in Ninja Gaiden (Xbox) to wreck the last boss if you were cheap? Yes.
Lets you teleport at no cost, just by moving the right stick wherever you want to go? Oh god yes.

Red Orchestra: Bolt-action rifle. Always a good, handy weapon, if I can't get a semi-automatic rifle, LMG or tank. I'm not as good as some, but it works pretty well at any range.

Call of Duty 2: MP44. I usually pick it up whenever it's available, habit left over from the first game where it was fairly rare and fairly pwn (this was before I started playing Red Orchestra on a regular basis). Also, I tend to drop whatever standard rifle I'm carrying for a G43 if I see one.

Half-Life 2: Pistol, and if that fails, crowbar. Four well-placed pistol shots to the crab will kill a zombie, and it's got a pretty high RoF. Crowbar for obvious reasons. It's actually possible to melee zombies to death without being hit back, the crowbar has a slightly longer range than their claws.

Left 4 Dead: Pistol, obviously :p I generally go for the shotgun and autoshotty, though I take a hunting rifle from time to time too - I'd take it more often if I was any good with it :p

Halo: Assault Rifle (1), Battle Rifle (2), dunno (3)

I tend to get the Lincoln Repeater rather early because of how common the Hunting Rifles are, sure the .44 ammo for the LR is rare, but it packs an astounding punch. Even with fairly low Small Arms it'll take a Super Mutants head off in a single shot. And once you get access to the ammo-press from the Pitt even the Ammo isn't an issue any more.

Another favourite of mine is the Gauss Rifle you get from the Anchorage Armory, MF cells are again fairly rare at the start, but damn that is one great sniper rifle. And with Zeta repairing it isn't too hard either.

Tesla Cannon isn't half bad either, but you don't get that very early.

For other games: generally anything accurate with a high rate of fire. (Mass Effect Assault Rifle for instance)
