I just don't think it would work, personaly. The reason being that the entire
point of Skyrim is not having to conform to a character archetype or mode of play, so jumping into a chum's game and having to do things the way they like would ruin that freedom.
My flatmate and I are both playing this game on different consoles. I wouldn't want to co-op with him because we have very different styles; he's an archer-slash-mage who spends a lot of time exploring the wilderness, hunting and mining and whatnot. I'm a powerful heavy armour armour crafter (smithing/enchanting, booyah) who specialises in sword and block, playing the game with a heavy emphasis on completing objectives and seeing what happens next in the story. He'd feel rushed playing at my speed, I'd feel bored playing at his. Of the several other friends who are playing it, I'm sure none would want to co-op with me because we all focus on different things, play in different styles, and the conflict between playstyles would lead to arguments or sheer boredom (depending on the friend).
When the entire premise is "do it your way", an alteration to "do it your way, if your buddy agrees" or "do it their way" wouldn't sit very well. If you can find someone who will happily play at your speed, loot the things you want, pick flowers when they'd rather be crushing skulls etc, then good for you. I just don't believe it works very well in a game like this.
