Varied armor pieces were removed to alleviate strain on the processor. While it would be nice to have them back it's doubtful they'll return in a vanilla Elder Scrolls game in the future. At least not to the extent Morrowind did.
Guild questlines in Morrowind were absurdly long and were styled after older RPGs in that regard. They didn't particularly have an overarching plotline, and to my knowledge a lot of players were irked that they were locked out of certain quests when playing a Knight. Morrowind required at least 3-4 playthroughs inorder to complete it 100% and most gamers really didn't have the patience for that.
While I dont agree it should have been dumbed down it's the big reason why it happened.
With werebeasts, Daggerfall's wereboar and Werewolf were very rare to find if I recall correctly. You only ever found them once in a blue moon and even then it was harder still to find a Werewolf over the boar. Alongside that they were also very powerful and there was what a .5 percent chance of catching Lycanthrope from an attack by them?
Given the fact they got rid of randomly generating worlds in Morrowind, Oblivion and Skyrim it became natural that a lot of this got simplified. It would be too annoying for players to fight a powerful creature like a Werewolf randomly on the over world for instance.
