In terms of competitive Ubers, probably Kyogre (most used Uber pokemon) Deo-A (Highest attack stats in the game) and Zekrom. I don't use the last two on my staple ubers team often, but i have frequently curbstomped people with only the kyogre- choice scarfed, rain boosted, water spouting death. Seriously, I beat one guy only using kyogre's water spout- he never got a hit in.
Although, that is less impressive when you consider that a lot of Ubers players still use charizard. No, solar power does not make it acceptable for you to use it.
Honorable mention goes to imposter ditto.

I only liked the ones that are low level to start of with, given me plenty of time to level them up and get an understanding how to use that Pokemon.

Ho-oh is definitely one of my favourites. The first Pokemon game I ever played was Gold, so he'll always have a spot in my heart because of that, but additionally, he can revive the fucking dead. That is the most amazing, miraculous power ever.
Reshiram is another one. I really like his design, from his appearance to his typing, and I also like the fact that he espouses the idea of truth.
It's actually pretty hard to choose a third, but I guess I'll go with Mewtwo. In my head-canon, I view him as the most powerful Pokemon in the world (exception: Arceus), and the first Pokemon movie is the only one I ever really watched, so I definitely got some nostalgia from that.

Giratina, Dragon/Ghost. Only one of that dual type.
Dialga, Dragon/Steel. Same deal as Giratina.
Hydreigon, Dark/Dragon. Though a pseudo-legendary, I cannot simply pass up a pokemon that I can nickname "Tiamat" and feel justified in doing so. Especially if it is shiny!

My fave is Mewtwo. He was the first damnit! That, and the whole Cinnabar Mansion and what happened there was just real interesting.
Kyogre is second. Kyogre + Water Spout = OP as hell.
Giratina (Second form, the form with legs was just silly). Because this shadow dragon snake looks pretty badass.

1. Meloetta. She's just so damn adorable.
2. Arceus. He's a god. You can't beat that.

Tough one. I pretty much love all of the Legendaries. But my top three picks would have to be;
A) Ho-oh: Gold was my first Pokemon game, and Ho-oh quickly became my favorite. The Tin Tower, the legend behind Ho-oh, and the general backstory behind it all contributed to it being one of my makor favorites.
B) Celebi: Celebi is that one Pokemon I find incredibly useful no matter what team of Legendaries I build (being a Grass/Psychic n' all). Celebi is probably my "signature" Pokemon; if I'm in a battle, he'll be the first one to come out.
C) Giratina: Satan Pokemon. Badass.
Honorable Mention: Unown. Not technically a Legendary, but my favorite Pokemon of all time, mostly 'cause of the nostalgic happy feelings I get from remembering the first time I met one. A few times I would forgo training one of the starters and using one of these as my lead Pokemon just for the hell of it.

How is it not the best thing ever!? >.> A zippy ghost that flies into your monitor and blinds you with it, flies into your computer and pings you with CDs and circuitry, then flies into the TV and smashes into you with it... and then flies into my 3DS and plays my free Zelda: Minish Cap on my corpse, but thats just me because im the only person that owns a 3DS. In the world.
Its in my top 3 of all pokemon, not just legendaries ^^

1. Rayquaza: Its look and moveset, as well as its stat growth are just phenomenal (but I HAAAATE Rest).
2. Zapdos: Type-Wise, the best of the 3 birds from Gen 1.
