Again, we don't know. If she is Amy there might be a perfectly valid story driven reason for why she's using a different name... and wearing a hood. It's almost like she doesn't want to be recognized eh? I have to add something though, and I hope that you catch this edit and that's this
This isnt supposed to be about her not wanting to be recognized (if it is amy). Viola's character is quoted from her page to have amnesia:

Now Im not saying thats what the person you quoted said, and certainly not what you yourself said. its just a common argument that I feel compelled to add in when I say story in fighting games. and the Soul Edge/Soul Calibur franchise has always been good on stories. You look at Seigfried and thats the classic Greek Hero arc. Its overconfidence, descent to evil, the plagued mind, separation of identity to confront the evil, and finally the final battle to vanquish your evil (all told through SE, SC I-IV respectively).
You look at raphael and Amy and thats the classic love story. the disgraced noble who finds the peasant girl he deeply loves and would do anything for her to keep her safe, while she simply wants him to be safe from himself and his ambitions so she may keep the man she loves.
Ivy is confronting the demons of your heritage and family, Xiangua is the plucky heroine who wants to save everyone so they dont have to fight for her and be hurt, Sophitia is the tale of a woman who grows to a mother with a horrible past, Cassandra is saving that woman and her family, shouldering the burden she believes is unfairly placed by the gods upon her sister, Aeon Calcos (lizardman for this not in the know or that dont geek on this series) is about finding your humanity and seeking vengence or retribution from a god that had wronged you.
Theres just a lot of story in this, and this Daishi fuck is just tossing it all out. Seigfried has no purpose in Soul Cal V, his story as its been defined by the games to us is over. a nd what does he do in this story? he goes and forms the group that led him on this path of evil and pain. And its not even a reboot, hes just 20-30 years older. Hes there because if he wasn fans would ***** and piss and moan. Raphael's not making it to this game, so Amy loses her love, making all that progress ad story she had in the series worthless. and why does she no longer have this? She has Amnesia, the age old card that is a staple in most bad to average cookie cutter games that flood the market gamers love to rip on.
And yes, this may all just be speculation. She may not be amy. thats why i said potentially. If shes not amy, its all null in void and pointless whining. But this is just the chance that it is. just the chance that she is amy. thats what bothers me, and you have to admit, she does look similar to amy, and that cant be coincidence. THe rose design, the curl haired, the gothlita look, the pale skin, the double cape behind her that was a signature of raphael's two recent outfits.
So thats what you can sum it up as. The potential to fuck up a character, and fucking up established story. If shes not amy, then yeah, my argument is unfounded. But if she is, then Im just saying I guess.
