Mafia will probably run. It's one of those games that is great but you don't hear thrown around much. It'd be good if you posted your system specs so we could make a more inofrmative suggestion. I'd suggest:
GTA III
Resident Evil 3
MotoGP 2 can run on quite low down machines with some still impressive results, so I think thats worth a look if motorbikes are liked by you..
And as other people have said, Half Life, Operation Flashpoint, Red Alert 1/2 etc

Seems weird that Hitman 3 would run, but Theif 1 will not.

I mean cmon, Theif only runs in 256 colors. Maybe you have some kind of conflict.

Half Life 2 should work on lower settings (Portal in the same vien)
If your into strategy, Civilization 4 has rather low system requirements (Don't run huge maps)
Neverwinter Nights if your into RPG's and there's a ton of community content
Sim City, or The Sims 2 if your into anything Maxis.

you might wanna try the PC version of metal gear solid. It has slightly better graphics than psx but it lacks well the gamepad (but even that can be solved)
Further more severance blade of darkness is a very fun hack and slash games wich is overlooked by most people but is sure is fun.

Also Final Fantasy VIII is not a demanding game if you like J-rpg.

But I wonder why thief 1 won't run that game is ancient...

Edit: By the way, I've played a lot of these, I only mentioned a few to indicate my comp's limits

If you can find it I highly recomend Heretic 2, I had good fun with it, also Deer Avenger 3D is fairly good but onece again if you can find it. I would also be remiss if i got forgot to mention dIsciples 2.
