Oblivion's NPCs were butt-ugly. Also, CYRODIIL IS A JUNGLE.

Skyrim had better character models, and not a bit of canon defilement to be found.

I disagree with you that the character customization is better in Oblivion. Skyrim is simpler, but I think it's a good thing. Oblivion gave too many sliders and if you wanted a character that didn't look like utter trash you really had to work for it. In Skyrim, at least they look natural. I'm not going to specifically say things I prefer about Oblivion over Skyrim, but here's a few comparisons between Skyrim and Oblivion to give a general impression.

Firstly, I wish to begin by saying that I like the aesthetic in Oblivion. The world may not have massive vistas, but I really like how vibrant and colorful the world looks. Personally, when I look up at the sky in Oblivion I find it leaves a far greater impression than Skyrim. Basically, Oblivion has its thing going on opposed to Skyrim which is trying too hard to settle for just looking real.

With that said though, Oblivion is pretty fucking ugly. Yeah, I know I said that I preferred the aesthetic, but lets be honest here - the environment is bland and the character models are atrocious. Really, it's going to take me awhile to describe everything that's wrong with their faces.

You see that? That's usually the expression their face has. While we're at it, lets also consider that their porky faces usually come in a strange fucked up blend of colours. Why do all the faces look like they belong to a multi - coloured Newt Gingrich or Donald Trump? Orcs and half - elves look like they belong in a cartoon. If that's not enough, that's not even getting into the customization. So what if it gives you more options? It's more complicated, but that doesn't make it any better. Even more so if the characters look damn ugly. Skyrim has better customization. The beast races have more to tweak, and neither the Orcs or High - Elves look like a joke. And at least if you do make an ugly character, they're ugly for all the right reasons. Not because they're an unholy abomination of disfigured facial proportions, but because of scars, eyes, and numerous other features. Oh, and at least you can give your character a fucking beard. (Not that I'm into beards my self, but I'm just throwing it out there)

Now back to Oblivion. I kind of miss being able to pick my skills and I miss maintaining my equipment. Having gear that could be damaged made me feel much more of an adventurer. To be honest though, I'm not sure if I miss anything else. I don't care all too much for good graphics, but horrible looking character models kind of scares me off from delving back into oblivion.

I read a theory that the whole of TES IV happens in Sheogorath's realm, unbeknownst to the player. That's why all the humans look deformed, the beast races look like Winnie the Pooh action figures, and you get all those surreal voice changes.
