This happened to me with the show Fringe at the end of season 3. Everything seemed to have been wrapped up perfectly, and then apparently season 4 came out a few months later. Still no idea why.
Fringe is exactly like Lost. If it had been cancelled, or simply ended at the end of Season 3, I would be completely happy. Instead, the series' end up degrading further and further. Particularly the fifth season of Fringe. What utter bollocks.

Metro 2033. That's the book, not the game. I couldn't finish the game because it started lagging like crazy in that sewer-kind level.

The Two Cathedrals, for me, is the most perfect episode of TV ever. Just the way you've built up with setback after setback and the revelation of Bartlett's illness, with the flashbacks to his past with Mrs Landingham, to him yelling at God in Latin in the cathedral. But the ending blew me away, the storm, poor CJ dealing with the press, Charlie taking his coat off when he realises the president isn't wearing a coat, the shots of the characters walking to Brothers in Arms. And then finally, the triumphal ending, Leo saying "watch this" and Jed putting his hands in his pockets, looking up and to the side. Season over.

As I said, perfect TV, but only works because of the way you've invested in the characters over the course of the first 2 seasons.

The Astro Boy manga story "The Greatest Robot on Earth." It was darker than you expect children's comics to be, and darn good stuff. Highly recommended.

I'll echo Breaking Bad. And Also, Metal Gear Solid 4, (Snake Eater gets an honorable mention but it wasn't the ending of the /series/ so I guess it doesn't count, otherwise I'd pick it.) yeah the ending cinematic was long, but it tied /everything/, all of the loose ends and topping off the Snake saga fantastically. And the lead up? By god the lead up! The cinematic before the final fight, the fight itself, despite the awful control scheme, was one my favourite boss fights of all time, it felt epic. Just two old dudes punching the everliving crap out of each other on top of a tanker, in a moment embodying everything the series had been leading up to.

Secondly I'll go with Kill Bill part 2. I never really got the ending to that when I was younger, I preferred Kill Bill 1, cos it had all teh fightings. I was dissapointed that Bill and Beatrix didn't have a fight, but it's precisely the fact they /don't/ fight that makes that ending so powerful. I still love both parts but part 2 wins out because of that ending.

Bills Superman speech still gets on my nerves though. ¬¬

Funilly enough, Breaking Bads ending was mirrored with the Dexter ending which aired at the same time, which was conversely one of the worst endings I've ever seen.

I think the last time I thought that was after The Lego Movie, and before that I believe it was after I saw The Wolf Children, and the ending of The Tatami Galaxy.

I also think this every time I listen the the entire Sports album by Tokyo Jihen.

I mean, Breaking Bad is an obvious recent answer. It was obvious what the ending was going to be, and if you paid attention closely to the characters the way it ended and how exactly it all happened was foreshadowed to some degree, yet predictability isn't always a bad thing and BB showed this. The ending they chose was the only suitable one for the series.
It's funny that you say the ending of Breaking Bad was predictable, because when the writers started writing season 5 and had Walt buy that M60 they didn't know at the time what they wanted him to do with it, they just thought it would be a really cool flash forward to do at the start of the season and basically decided they'd figure out the rest in the future.

Here's Vince Gilligan talking about writing the end of the show, and some alternate endings they thought of before they figured out how they wanted to finish it:

I worded what I was thinking really poorly, as I meant that the actual events weren't predictable but the implications and how the characters would develop at the end was much more foreshadowed.

The exact scene and what specifically happens didn't really matter, it was the closure of the character that I thought was the more important and predictable part of the ending.

I watched the ending to Gundam UC last week (see avatar) and it was everything I wanted it to be. It was awesome in so many ways and had me in tears on two seperate occasions. Truly amazing.

I think I will have to go with Monk there. I found it really satisfying.

The ending of Fullmetal Alchemist Brotherhood I found really enjoyable.

Something more recent..Xmen Days of Future Past I found myself very giddy at that final part.

Too many endings to count... But, will still try and "fail"...

-Warehouse 13's ending...
Endless wonder...
-Breaking Bad's ending...
-Haganai Season 1's ending...
-Afro Samurai's ending... (All of them...)
-Ed, Edd, n' Eddy's overall conclusion... (Would NOT ask for this series to make more episodes... Just a complete series box set, that's all...)
-Avatar: The Last Airbender in general...
-Any of the Persona's [True] Endings...
-Baccano! in general...
-Cowboy Bebop's ending...
-Samurai Champloo's conclusion...
-FullMetal Alchemist Brotherhood's ending...
-Tales of Symphonia's ending...
-The Lego Movie in general...
-Portal's ending...
-Shin-Chan's "abridged" ending... (The Kappa...)
-Gunslinger Girl's anime conclusion? (I really loved the first half's ending...)
-The first 100 or so episodes of Spongbob?
-The Lego Star Wars games?

...I'm really drawing straws at this point...
