Now I realize I could of easily done some thread searching and found a general group of good anime/cartoon series to watch but I find myself very nit-picky about what anime/cartoon I watch...

Also my PS3 web browser takes away my ability to search on the website and forces upon you this wall of text...So you have my apology in advance. I am here to seek maybe not good anime in general but something I can tolerate personally. I dislike anime with large amounts of filler content greatly so anime like bleach/naruto are out of the question. Even though I admit to them being interesting, they just are not my type. Also I have an incredibly low attention span for longer series unless I get really deep into the story, so shorter animes are more welcome(100 episodes or less). I will be open minded with longer with if they dont have to much filler content, etc.

It is epic and wonderful. It's short(ish), there's basically no filler at all, and it's about baking.

Tengen Toppa Gurren Lagann is just so insane with its over-the-top-ness I couldn't help but love it.

Also, Death Note, Wolf's Rain, Baccano, Cowboy Bebop and maybe Eureka Seven.

Although if cartoons are counted as well, I have to include this:

Revolutinary Girl Utena. It's 39 episodes, and, while it does use some recycled footage and have a total of four filler episodes, the other 35 episodes are straight up plot. Also, don't watch the movie until after you see the entire series (serious spoiler alert).

Noir is another good one. 26 episodes and done.

My-Hime is good for that as well (also about 26 episodes).

And, of course, Neon Genesis Evangelion (26 episodes, two movies - or watch the new movies).

Edit: I disagree on Death Note as it is kind of filler-tastic. It's a really good series, mind, but there are some really long, dull bits. I'd recommend it in general, but I'm not sure if fits the OP's needs.

Also just abit off topic :3

I read a manga about 4 or 5 years ago that was about a girl going into a mansion for some reason and finding out that the person who owned the mansion was a vampire, Also there was a boy in the series with short black hair who liked the girl who came to the mansion.

Very little information on that one but I only read the first 4 books and was always interested in picking it up again!

Berserk, Vinland Saga, Cowboy Bebop, Neon Genesis Evangelion and maybe Gurren Lagann. Oh and AKIRA. And Afro Samurai if that counts.

Tengen Toppa Gurren Lagann is so awesome that it actually hurts. It's a show about mechs that run on FIGHTING SPIRIT! Let that sink in. It's 26 episodes with a mid season conclusion about halfway through, i'm not as big a fan of the 2nd half of the series though.

Baccano! is another awesome series with great characters and a fun story. It's 13 episodes and it gets better and better as the series goes on.

Hellsing has both an anime and an OVA series with both of them being awesome. I'm partial to the OVA's, but they're still in the process of making those. It's violent, it's got vampires, and it has some really cool characters.

Elfen Lied is another one which seems to be in the same vein as Hellsing, i'm actually watching it right now(just reached episode 8 last night) but from what i've seen it's pretty sweet. It's 13 episodes.

Lastly, there's Digimon Tamers. Yes it's a mon's show, but they actually removed almost all of the goofy junk that crops up in the earlier seasons. It's 51 episodes and probably my favorite Anime series.

And before this gets to long i'll finish up with Chobits. It's mostly a romcom, so if that's not your thing then you can just ignore this one. I love everything about Chobits. I love the characters, I love the story, I love the english dub acting. It's just a personal favorite of mine, 24 episodes long.

If you value your sanity, never EVER even THINK about TOUCHING Neon Genesis: Evangelion.
Sorry if I hurt anyone's feelings (@Cheesepower5), but DON'T DO IT.

However, Soul Eater, Full Metal Alchemist, and Fairy tail are all reasonably good animes. Despite the fact that i prefer their mangas.

MAR wasn't that good, and I saw all of it. But for interesting anime...

Hayate the Combat Butler (comes in Japanese language, subbed in English...and it's not a port! You can buy it legally from Amazon! *sigh* Fair warning. :p)
Kenichi The Mightiest Disciple (hilarious, plenty of action - minus the fifteen minutes of non-stop screaming)
Gundam Wing (old, but a classic)
Dragonaut: the Resonance (a drama, but not overly dramatic)
One Piece (the Funimation dub. there is some filler but it doesn't take it to the same level as Naruto or Bleach)
Full Metal Alchemist: Brotherhood (action comedy horror, very entertaining)
Black Cat (just action comedy, also very entertaining)
