I've still yet to beat it legitimately in Dante Must Die difficulty (as in, no cheating for Super Dante form and spending the fight in Quicksilver mode).
The Devil from Kingdom Hearts. I couldn't find a pattern: I knew the moves, but he never did them in an order that I could figure out and use to actually be capable of dodging them while still doing damage.
Also, that fat Halfling from Overlord, because I could not figure out how to get my imps to dodge his rolling attack. I finally managed to beat him by myself, took me about twenty minutes.

Mother fucking Doom Dragon in Golden Son: The Lost Age (might have gotten the title wrong). That guy kicked my ass so many times. Had to do so much grinding in Mars tower to stand up to him. But man was it satisfying when I finally beat it.
Also, the Shadow Queen in Paper Mario: The Thousand Year Door. I could never manage to beat her. Every time I tried she just destroyed me. And to add insult to injury, my little brother has managed to beat her. I feel ashamed.

The first time I went against Sledge in Borderlands, he beat me senseless for around half an hour.
Theres a boss in the later part of Siren Blood Curse where you're on a roof and you have to throw tv antennas at this weird ass ***** on the ground below you. I've still yet to do it, they could not have made it any harder for the player if they tried. It's a cruelly unfair fight.
First boss in Zelda Seasons or w/e the gameboy color game that linked up with the time game. Took me for friggin ever to kill that guy. Quit he game for a couple months. Then while on vacation beat the boss and the rest of that game and the 2nd in bout 2 weeks.
