I play Survival with minimal mods. Most mods I use on Minecraft are visual and audio only stuff, maybe a mod pack that adds new monsters and creatures.
Then I add some sort of Villagers overhaul mod. One that makes them visually distinct, gives them jobs, "personalities", and the ability to build and maintain structures when told.
Once I've done that I just spawn in a world and begin wandering off in a direction. My first goal is to find a Village, because they are often in disrepair or horribly laid out (thanks to the random generation and how they often try to integrate with the terrain).
I spend my early hours getting materials and fixing the existing infrastructure and pathways, so the villagers can actually live. Afterwards I start ordering villagers to begin making more robust farms and buildings. I forget what the mods name was, but you could actually have them build shops, homes, and practical structures if you gave them the materials, which in return spawns more villagers over time. In between their building I forge new pathways to future building plans. Eventually, if I didn't get bored, I'd start having my own kingdom, naming myself King, and watching over my people, often going out on newer adventures.
It requires a bit of imagination and role playing, since the villagers don't actually care what I name myself or what I do, but I like to pretend the Enderdragon is the huge threat to my village and if I don't slay him in a certain amount of time both it (the dragon) and his mob army will overtake my village, in which case it turns into a war. One that I technically cause by spawning a bunch of the mobs myself, BUT WE'LL IGNORE THAT SMALL DETAIL WHILE WE PUT THOSE WALLS AND DEFENSES TO USE, DAMMIT!
It's a long "campaign" though, and I've only really "finished" it once. Got close a second time, but another game came out just as I got to the point of finishing building my kingdom and was ready to take on the Enderdragon, so I lost interest and never went back.
Nowadays when I try to start it, I get distracted half way through and forget about it.
