Not to get technical but Ganon isn't even in that one, unless you count the Shadow version in the battle against the Final Nightmares, and that one is an extremely lobotimized version of Link to the Past's Ganon. Again, Metroid 2 remake. Check out Von Richter's 'Metroid SR388' to see just how far some folks will go to see this made reality. If he ever completely finished it it would probably be greater than any Nintendo remake (it includes all the Super Metroid powerups too).
All three of the Gameboy SaGa games (aka Final Fantasy Legend) deserve remakes with the grind quotient toned down (okay, maybe not the first one, but the third was great). Alas, since SaGa Frontier sold poorly even during a watershed era for JRPGs it will likely never happen. I'd recommend Final Fantasy Adventure but there's already been one- Children of Mana.

I must admit The Orcale games were quite easy for me, the Ganon in that was like a zombie who has fallen on the groud and I had a shotgun to his head.
