God Hand, Genji: Dawn of the Samurai, the PS2 Ghost in the Shell game, Ultimate Spider-Man, Midnight Club 3: DUB Edition Remix and Metal Slug Anthology. Oh, and King of Fighters XI.

Edit: But mostly Hitman: Blood Money.

*Starcraft, always fun infesting those silly command centres and breaking massive bases.
Red Alert 2 Yuri's Revenge, One of the few games that I do multiplayer in.
Deus Ex, Quite possibly the best game ever.
Deus Ex Invisible War...just kidding!
Fallout 2: It's like crack. Nuclear crack with mutants, power armour and railguns. My latest character is an evil, slave-driving, prize-fighting gangster porn star who can splatter man and mutant alike with her Gauss Rifle, whilst dragging the only two people in the Wasteland willing to travel with slavers along with her.
Galactic Civilisations 2 and its expansions: Just one more turn before I sleep...ok, just one more tech...ok, just one more planet...it won't let me stop!
The Total War Series: Same reasons as GalCiv, except without the lasers, obviously.

All Command & Conquer games, All Metal Slug games (Mainly MS3 lately) and Final Fantasy VII.
These games are just classics i can never manage to put away.

Soul Calibur III, LittleBigPlanet, Final Fantasy IX, some Shin Megami Tensei games (especially Nocturne) and Guitar Hero (it doesn't really matter which one).

Deus Ex - Probably the best game I've ever played.
Red Alert 2 - Yeah, it's not the deepest RTS, but what other one has Prism Towers and battles between specially trained dolphins and mind controlled giant squids?
Fallout 2 - There's always another way to play it.
Unreal Tournament '99 - For when I feel the need to just get a few headshots. (That sniper rifle is damn good at any range.

Oblivion was a big world, but the actual content was lacking. The PC and 360 versions are identical content wise.
Well as far as mods and console commands go the PC versionm from what I understand is much better

I keep going back to the old side scrolling Mario games, the good ones, Mario Kart and its 64 counterpart, Primal Rage, Warcraft 2 and 3, Morrowind (the best game in the Elder Scrolls series, Oblivian can go go suck a big fat one for all the skills it got rid of)Wolfenstine Enemey Territory, and of course Golden Eye and Perfect Dark.

Hen weirdly enough I have exactly the same thing, it keeps on jumping on and off my HD like a indecisive ostrich on a pogo stick.

The Baldur's Gate 1+2 saga usually get quite a few play throughs, from start of BG1 right through to the end of ToB is an epic RPG journey that is unmissable by any RPG fans out there.

Fallout 1+2 also deserve a mention as these are compellingly fun to play as someone completely different every time. (PowerFist to the crotch = win.)

UT2004. Unbeatable for a decent fast-paced gibbing session after a stressful day at work. Slap on some of your own music, and blow things up.

Vampire the Masquerade: Bloodlines is another one. Great atmosphere, characterisation and a rocking story keep me coming back to play as a different type of Vampire. That along with the fact that Malkavians dialogue is some of the funniest I've ever seen in a game, makes this game one I frequently re-play.

Grim Fandango. Ye gods it's fun. Sure it looses the same humorous surprises when you play it again a few years down the line, but it's one of the best games in it's genre.
