There are so many games i'd like to see remade like castlevania symphony of the night or ascendancy... i'd most likely go for breakdown, but you asked for a classic and it's an xbox game so i think i'll say marathon by bungie (since it was just awesome,and still is,especially in coop)

System Shock one and two.

They still run with modern systems (with a few tricks) and remakes could ruin them so i'd prefer a sequel that anyone can just hate&forget in case it goes wrong (

I'd have to say the original Ghost Recon. That game was awesome. So many good memories of getting some mates together and going all tactical in a co-op mission, I love hearing:

Oh yes, that game was great (even though it has obvious flaws), unfortunatly every ghost recon after it was just an average shooter
But i recommend the first one to everyone who likes coop

Golden Eye: 007, mainly because of its controls and AI intelligence.

Modders are also working on that! There's actually a functioning multiplayer mode out already. If no one's heard of it yet, moddb.com is a great place to get mods for your games (especially the hl series or anything made using the source engine).
