If you're an RPG fan and you want something singleplayer offline you should definitely play the last couple of Fallout games and Skyrim. Definitely the most compelling RPGs in the last...well, probably ever. Fallout 3 is my favorite game from this past generation but you might like New Vegas more. It's more of an RPG: a lot more story decisions and character interactions; the speech skill is a lot more useful in NV. Fallout 3 had more action and a more compelling world to explore while NV had a better story and a lot of the best Fallout 3 mods built into it.

There are some good graphics mods that improve facial textures to remove the sort of 'blocky' look on people's noses, plus other fixes and tweaks. As with the Fallout games, the unofficial patch is an indispensable download. 'Alternate Start' is a mod that allows you to skip the intro sequence completely by deciding if you started off in that situation, or if your character came to Skyrim in some other way.
I've seen screenshot galleries and videos of the graphic mod packages that make the game look freaking photo-realistic.
Yes, if you try these games, you will want to mod them. But get comfortable with it, it's not just downloading files and dropping them in folders anymore. You have to get the mod manager and get them in the right order. It's complicated but worth it.

I actually enjoyed the Tomb Raider reboot quite a bit (on PC). I've heard criticism of Lara's rapid change from random archaeologist into a superhuman killing machine, but for whatever reason it didn't bother me (not sure why, in other games it might have, but something about the reboot captured my imagination in a way that got me hooked and kept me engaged--except for during a few poorly thought out cut scenes--from start to finish).

I also really like Alpha Protocol. The combat isn't great, but it's serviceable enough to not break the game (for me at least). Some of the "suave" dialogue options make me wince, but as I usually take the professional stance, that doesn't matter much to me. It's a bit difficult to explain why I like AP so much, but something about it is extremely engaging. It's one of the few games I've played through 10+ times, and I never get bored of it. I've heard some people complain about bugs, but I've never encountered any (seriously, for me it's one of the smoothest games I've ever played). Anyway, it sold poorly, so you can usually pick it up for like $5.00 or less in a Steam sale.

Deus Ex: HR is a game that I didn't like much at first. I don't think the game was optimized properly when it was ported to the PC or something, 'cause trying to aim with the mouse always feels like aiming with an analogue stick (irritating to someone used to the normally much more precise aim of mouse and keyboard shooters). Also, you have to optimize yourself for combat to get through the boss fights (unless you want to spend an hour or more slowly chipping away at them), which is irritating as the game otherwise does a great job of recreating the open level design of the original. Once I got used to these obstacles, however, I had a great time. Definitely one of the more memorable games I've played in recent years.

Mass Effect 2: My favorite of the series. ME2 is certainly not a perfect game; the combat is a bit sluggish, you have a tendency to get stuck to walls or accidentally vault out of cover and die since they made one button handle all of those actions, and the plot makes little sense (although that's the case in all 3 games). The setting, however, is what really drew me in. From the grim, cyberpunk alleys of Omega to lush jungle worlds, the game sends you to a plethora of varied locals, all beautifully rendered in modern 3D graphics. While the overall plot is only so-so, the individual interaction with your companions is a lot of fun. Each companion's side story gives you a window into the lives of the inhabitants of the ME universe.

For strategy, Civilization V + expansions is pretty fun. I prefer Civ IV + the Rise of Mankind: A New Dawn modpack, but Civ V is definitely worth trying.

Fallout New Vegas is also worth trying out. It's not everyone's cup of tea, but if you've ever played Fallout 2, NV definitely recaptures its feel (both in terms of dialogue/humor and area/quest design). Also, on PC there are 900 bajillion mods for it.

I enjoyed Shadowrun Returns quite a bit, but lots of people seem to have nothing but unbridled contempt for it, so I guess it depends on the person. Maybe save that one for a Steam sale as well.

If you don't like my opinion, that's your prerogative, but to tell me I have no right to it is outside of your own right. If I were saying that people who play consoles were scum and trash and other things, perhaps you'd have a leg to stand on. I will put down the things all I want, but I won't put down the people. Learn from that, and thank you for your game suggestions.
Wait! Where did I ever say you aren't entitled to your own opinion?

I suppose I did. I have played some crazy weird things in the past, I admit, but that browser game you linked really pushes the limits.

Thanks everybody for the input. I think I'm going to go with Skyrim first since I already own it. Perhaps Fallout next since it was probably the most suggested game in this thread.

You should give Bioshock and its recent successor, Bioshock: Infinite. They're multi-genre FPS games, like you suggested, and they have pretty good stories, to boot. Bioshock at least is on my top ten list, and I suggest it to everyone who hasn't played it.
The gameplay is shooting (duh), but they add in these sort of super powers that have various effects (like electrocuting an opponent, lighting them on fire, its pretty basic x-men stuff).

I recommend the greatest timesink known to mankind - Crusader Kings II, a grand strategy game where diplomacy and ruthless manipulation can net you far greater gains than military might.

To add to this, really any of the Paradox grand strategy games are amazing. Crusader Kings II (Medieval dynasty from 1066 to 1453), Europa Univeralis IV (November 1444 to January 1821), Victoria II (1836 to the start of 1936 ), and Hearts of Iron 3 (1936 to 1948).

Although they all have similarities, each one are vastly different in how they play according to the time period. Victoria 2 is my personal favourite, though I have not played Europa yet.

All games must be playable single player, offline. I'm not looking to get involved in any more multiplayer games right now, but having a multiplayer option isn't a disqualification. Only that the single player game must be good and enjoyable
Strategy:
I'd say X-COM Enemy Unknown, and if you like it, the expansion, Enemy Within.

Grab Rome I and Medieval II Total War if you've never played them before. Here in the UK, Game are trying to get rid of their physical stock of both so it's cheap, though I'm not sure if that's the case in other countries.
Shogun II is generally recommended though I'm not keen. Rome II is steadily improving as CA wade through the bugs. Actually, fuck it, any of the Total Wars should absorb 20 hours or so at least. Though Empire is pretty buggy.

Also, give Civ IV and V a go

...And Company of Heroes.

For shooters you could try the newer Flashpoint games as well. They aren't as ridiculously realistic as ARMA or Red Orchestra, and there's not many left on multiplayer on either, but even the single player is rather good.

Bioshock and Borderlands for shooter-RPGs, though Borderlands does emphasise online play, even if the Single player is really fun also.

Mount and Blade: Warband. I have people ask me about a game to play regularly and I always suggest M&B. Then they always say it looks shit, then I repeatedly tell them to play it for the rest of that day, then they play it, then they spend at the least 100 hours playing it.

It's a game that is easy to run (unless you crank the battle size through the roof), cheap (£15 on steam, its on sale quite a lot and no doubt cheaper elsewhere), has a open sandboxy single player and enjoyable multiplayer from the get go.

While the default game is great on its own its real strengths are in the mods, there are so many of them, multiplayer and single player. I could recommend you mods but the list would be too long, from ancient Britain to the wild west and a stupid amount of other things.

I'm fairly certain its the best value for money game I have ever bought.

I also suggest SPAZ too, that's not got as much potential play time in it but its a fun arcadey space RPG thingy. Super cheap too. Space Pirates and Zombies.

Skyrim and Fallout:NV are safe bets - just remember to download some mods first via the two respective Nexus sites; Some really do improve on the gameplay experience a whole fucking lot and you don't want to do without.

Now some recommendations that haven't been mentioned yet and you might want to take into account before charging onwards...

* Minecraft: if you are into building stuff and finding your own fun in games through exploration this game is really a no-brainer.
* Terraria: much more gameplay-focused than Minecraft and basically plays a little bit like Metroid without the backtracking and with the added possibility to build and craft stuff.
* FarCry 3 Blood Dragon: a poignant and anarchic satire of 80s action movies as an FPS. Is well worth the ten bucks even with barely 8 hours of playtime if you are fast
* Neverwinter Nights 2 - Mask of the Betrayer: Made by Obsidian this expansion to the party based RPG Neverwinter Nights 2 features the best storyline I've seen in a game since Planescape Torment. The original campaign drags on but the combat system works and the characters and story in it are decent. If you can get through it the first expansion surpasses the original in every way possible.
* The Walking Dead: kind of like an interactive movie this game really succeeds in immersing you into the story and bind you to the characters you interact with. Beat it in like 14 hours or so but that game really is worth every penny.
* To The Moon: another interactive movie - but this time far more of a movie than anything else: you essentially just pay for the storyline as the "gameplay" is almost non-existent and rather annoying if it exists. Still the story alone is absolutely heartbreakingly tragic and equally as excellent.

Also seconding: Deus Ex: HR (Shooter/RPG Hybrid: very good gameplay, great atmosphere but lame story), Bioshock 1/Infinite (story driven shooters: decent/bad gameplay, great atmosphere, very good storylines), XCOM (Strategy: great, addictive mechanics and very accessible), The Mass Effect Series (RPG/Shooter Hybrid: good to very good mechanics, great characters, decent storyline plus some of the most memorizable and jaw-dropping scenes in recent gaming history), Civ 4 + Expansions (Strategy: global strategy with lots of depth, working mechanics and still rather accessible), Spec Ops - The Line (story driven shooter: really packs a punch in terms of atmosphere and offers some very bleak scenes and comments on the nature of gaming - YMMV, though, as it can come off as rather self-righteous; Still very good game that should be tried and has decent to good mechanics and a good storyline at its basest)

Monster Girl Quest, it's on PC. There's also a browser game called Corruption of Champions you could check out.
Come to think of it, I'd say that FS beats both of them in terms of sheer size, atmosphere and narrative quality. Plus, it's probably even more weird in the details if you look more cl....errr....I think I should stop now >_>

L.A. Noire
Max Payne Series
Dragon Age Origins
Baldurs Gate 1 & 2

Fallout New Vegas: RPG shooter located on a post-apocalitpic Nevada's Mojave desert, with a (very) little touch of black-comedy-non-sense. I've played around 90 hours, and have yet to finish most of the DLCs. The story is good, it's one of those games where so can really decide how you will shape the world.

Skyrim: Similar to Fallout, but with dragons, magic, swords and ancient tombs. And a civil war. And snow. Fucking tons of snow. You must play it with (lots of) mods, which is partially great since you can adapt the game to your own tastes.

Dark Souls: Action RPG. Grimmy, harsh, punishing and rewarding. A true masochist experience. Labeled as probably the most difficult game of the last years. It does have a multiplayer element: your world can get invaded by another player trying to kill you (it lasts until one of the two dies), or you can summon people to help you with bosses and such. Same the other way around. But you can also chose to play absolutely offline.

Amnesia, The Dark Descent: First person horror game. Most terrific experience you'll ever had.

Portal & Portal 2: Because reasons. Just play them already.
