Add my vote to Psychonauts. It would be difficult to give a sequel to though, the original was so... original that any other game using the same ideas would feel bland.

Sacrifice. The game had some amazing art design, and with what we're capable now, it would be one of the best looking games ever. Theif would also be good, if they discarded all the changes made in Deadly Shadows (mainly, making the combat suck.)

The last jack an daxter game was pretty bad. I think its about time to put that franchise to bed saddly.

I'd really like to see another game by Fumito Ueda (creator of shadow of the colossus/ico). Though they're not really to nostalgic. I can't really think of an old franchise i really miss too much, or that hasn't already been beaten to franchise death.
