Gonna echo a few of the above, and +1 for:
Any Mechwarrior sim or game
Eye of the Beholder series

For my contribution, I'll say Severance: Blade of Darkness. I remember it as being rather challenging yet rewarding and varied bladed combat. I wonder if it holds up to the TPS fighters of today...(gameplay wise, not graphics obviously)

The No One Lives Forever games. Never played them, as I didn't have even a halfway decent PC available to me until I was halfway through high school, and it couldn't really handle anything much more intense than Warcraft 3. I never got to play them despite having heard good things and would love a shot at them.

I'll add another one, Falcon 4.0 or its update Allied Force.

Its an F-16 simulator that I would play with class mates in my High school ROTC, I did buy my own copy but I have no idea where it is, so I would like the DD option.

Its definitely a "you basically learn to fly the thing for real" kind of simulator, but with the basics you can easy make a skirmish or a deathmatch multiplayer game and have some fun with it.

MechWarrior. Since MWO didn't deliver getting the old ones running would be great.
Imperium Galactica 1+2. Seriously, the second one is one of the best X4 games of all time, why isn't it on GOG yet?

The Neverhood Chronicles. GOG wouldn't even have to optimize it, as the physical disk still runs without a hitch on modern operating systems. Yes the game sold abysmally poor back in the day (only 42,000 copies), but it's since gained a rabid cult following over the years. I guarantee it would turn a profit.
That was the first one that sprang to mind when I saw this thread title. I remember the first time I played the demo of The Neverhood many years ago and I had just never seen anything like it. It's stuck with me all these years.

I'd love to see the Windows 95 version of Earthworm Jim as well as Pitfall: The Mayan Adventure. Two awesome platformers. They do have the DOS version of EWJ but it doesn't have all the content of the Windows version. Probably a pipe dream though due to compatibility issues. I own physical versions of both those games and they do run but not very well.

Nitemare 3D is a fun Wolfenstein-esque FPS that I love. It was a sequel of sorts of the Hugo Trilogy, a series of graphical adventure games. It's actually still available for purchase from the creator's website (along with the Hugo games) but it would be cool if it got a bit more of a widespread audience.

Any game should be there but if we are into specifics then

Swat 4 (they have Swat 3, how can they not have 4)
Hidden And Dangerous 1 and 2
Freedom Fighters
Metal Gear Solid 1 and 2
Second Sight

EDIT: Saints Row 2 since they actually did the terrible port (or atleast are part of the same parent company, CD Projekt Black did the port and CD Projekt runs GOG, CD Projekt Red does the game development stuff), maybe by putting it in the GOG store they could tweak it up a little.
Second sight used to be on GOG but they lost the rights.

Advent rising
Mechwarrior franchise
Heavy gear franchise
The entire final fantasy series (not just the super popular ones but all of them from the original to tactics)
Grandia
Dragon quest franchise
Secret of mana
Shadowman
Kingsfield series (along with demons souls)
Armored core series
Legend of Dragoon

I know many of these were never officially released on PC but I would like to see them revived on PC and let the younger generations play the great games of the past

I have only ever seen videos of the games but I can tell I would have a fun time with them. The bit I played of Mechwarrior Online was fun but I'm a more singleplayer/coop person.
Mechwarrior 4: Mercenaries was released for free a couple of years ago. You should be able to find it without a problem, and I don't think it has any problem with newer computers, so there isn't really anything stopping you from playing it.

Microsoft Stopped playing ball with that. MekTek is gone and it is no longer legal to get MW4 free. The improved MekTek version with improved graphics and a vastly expanded mech list is also technically piracy now. My assumption is that MS hopped that if they shut down MW4 and MW: Living Legends people would be forced to go to their online abortion for a mech fix. That said the disk version of MW4 is fairly cheap online and does work on modern computers.

OT:
-Jazz Jackrabbit 1&2: One of the most enjoyable 2D platformers I have ever played, and surprisingly obscure despite being made by now household name Epic (then known as Epic Megagames and not a household name). A great mix of speed, shooting, and humor. Unfortunetly the second game did have some severe bugs (most notably, spike traps would almost always drag you into the floor, forcing you to load a past save) and the EU only expansion pack was unfinished trash.

-Freelancer: Does this really need explaining? One of the best, and absolutely my favorite open space game.

-Jill of the Jungle: Another great platformer from Epic in the DoS days, and interestingly on that sold on the idea of bucking the "save the princess" trend many many years before the current widespread argument about female representation in games. Almost worht playing just for the hysterically overconfident jabs at other platformers that would go on to be better know by a factor of infinity. Also has a spiritual sequel know as Vinyl Goddess from Mars by another company, but I never played that one so I have no idea about its quality.

-Fury3: Its like Terminal velocity but better. Ok to be perfectly honest actually its almost the exact same game with a few improvements, but I would still love to revisit that little piece of my childhood.

-Mechwarrior 4: Although as said above it will be a cold day in hell when MS actually lets that happen.

Wow, I did not know that. What a massive dick move, pulling the game and then not releasing it for sale anywhere else. Classic Microsoft. Thanks for the info, though.
