I've seen a few people mentioning the word mainstream to explain certain games, but I can't relate to that, as I don't know what the term mainstream means. So is there anyone out there able to explain to me what it means, and maybe give a few examples?

Usually it's games that get a lot of press and hype. They can usually sell fairly well even without great reviews. (bad reviews can change this, though) They can usually sell just by being on the shelf.

Also, they could be called the games that the vast majority of gamers play, you know, the people who don't keep up with the news and whatnot.

Mostly, if people talk about it a lot and it gets really popular, it reflects what's currently liked by the majority of the people. Subsequently, developers see that popularity and start ripping off of it. Namely, space marines and bullet-time.

Of course, it all really comes down to personal opinion. If you don't like the popular games, ro if you think obscure, unknown games are better, then you're just one of the minority. Nothing to be afraid of, angry fanboy lynch mobs aside.

A game that appeals to everybody. One that almost everyone will buy, and will normally be talked about and overplayed for a long time. These sorta games get very boring very quickly, there is only so many times in a month you can do the same thing over and over again.
Games should stick to there originality so there is games for everyone who like different things, instead of trying to be the best game stealing parts from others. That way people would love a game and be less likely to get so bored of it.
Resident evil 4 and 5 are totally different to what the origonal ones were, to appeal to a bigger audience. They are no longer resident evil games. There is no survival factor, no horror factor.

Games from big companies that a lot of people play are mainstream. Games that appeal to usual buyers in the genre, like Halo, Call of Duty, or Killzone for the FPS genre.

Non-mainstream, or unconventional games, are games that not a lot of usual buyers will like. Katamari, for instance, or Flower. Very unconventional.

Either that many people play it or because it's in the centre of hype. WoW is mainstream because everyone talks about it, because it has made itself over hyped because of commercials.
Same thing for Gears of War, Killzone 2, Fallout 3, Crysis(even though no-one can play it), GTA 4, Tomb raider and if you can't relate to anything previously mentioned here is the mainstream plague that has brought hell on everyone on XBL HALO 3!

Non mainstream games; Jak and daxter, Ratchet and Clank, GRAW, Timeshift, Red Alert, Starcraft etc. etc.

Action/FPS that you can play online with a large group of people. Has nice graphics, rudimentary gameplay, repetitive areas, usually about future America vs. alien invasion, hyper-masculine characters in large armor, no skill needed to play (only a shit-ton of Ritalin), a paid-for 9.0 rating on Gamespot (atleast), Mature rating, and lastly, Quick Time Events.
