American McGee's Alice, so creepy, such great atmosphere and concept. I haven't played it in awhile, so I really couldn't tell you whether the controls are broken or not, but oh my god, it is my favorite game of all time.

Little King's Story
Its gameplay can be compared to Pikmin, but besides these 2 games, I don't know if there's anything like them. (I wonder maybe Overlord, but I havn't played that).
This coupled with its gorgeous quirky world and charming atmosphere and visuals makes it unique in my opinion. Not to mention the subtle mature themes woven into a childrens story book exterior.

Oh and the Hamtaro games. They involve using Ham-chat words which you gradually learn to make your way through the game. Its kinda like a game made of multitudes of fetch quests, go here to learn this word so you can ask someone to teach you a word to push a hamster off a building to hear him yell out another word (yes this happens). I like it.

It's not out of demo format yet, unless you want to play the UT3 version, which is longer and drawn out needlessly.
Anyway, the demo is good, and free, but you don't have the actual gun outside the demo level, so you can't complete the game, just reach dead ends with impassable doors.
It's a really freaky and neat game, very satisfying to complete some puzzles.

Burnout Revenge. It's not quite a racer and it's not quite Destruction Derby either. Only car-based game I've actually liked.

Indigo Prophecy and Heavy Rain are two games that have some really unique gameplay mechanics. I

Uniracers(Snes)
RollCage(PS1)
ActRaiser(Snes)

I really hoped Kinetica on the PS2 was going to be good, but it ended up being rather junky.

Mischief Maker, really one of the only good games that was both fun to play and had a very unique story line.

Quick Time events? Fixed Camera movement for some parts?

Not unique at all.
But they used the quick time events to drive the story. Most games cannot claim that. Plus, the quick time events weren't always just simple button presses, and sometimes required you to either press many buttons at a time, or use the right analog stick.

The Research and Development mod for Half Life 2 (if mods count), and there's this flash game called "Shift".
