I know Flandre is much harder than her, and that I've been progressively working on the final stage, it's only on a good day will I actually reduce Remelia down to her final stage. And even then I die because of her stupid immunity to spell cards and damage. GRRRRR!!

Those fights always proved to be the most epic and personal favorites for me mainly because I got to see Sonic and Shadow in their super forms fighting together.
Secondly I loved the last fight with Vergil because he proved to be a final boss that was actually the hardest boss to beat. The fight had you using every trick you learned throughout the game and kept you on your toes the whole time.

Virgil is one of the few actually challenging bosses in games these days when even on easy difficulty. Plus it's refreshing to have a final boss that is indeed the hardest boss in game.
Someone above mentioned Dragon Age: Origins' Archdemon, but I would have to disagree, as this is an example of the exact opposite of Virgil. I found the fight with the High Dragon much harder. Much.
Found the Archdemon quite an anti-climactic boss battle TBH.
Virgil on hard difficulties really takes the cake though.
Kinda makes you wish DMC3 had the (one) good feature from DMC4 - the ability to switch styles at will. Being stuck with just Swordmaster or Trickster made the Virgil fight quite a tough one.
(Protip: Trickster is probably the most useful, as he's an absolute beast to try and string combos together against. Dodging and agility is key)

Though that's the big thing about Virgil - he is a fair fight, unlike some other bosses. He doesn't indefinitely stunlock you with one cheap attack. You've always got a chance to fight, and there aren't any "undodgeable" moves (a lot of bosses tend to have these).
Though in terms of styles, I take it from your comment I'm not the only one who finds Gunslinger or Royal Guard totally useless in this fight? (Though Royal Guard is pretty damn useless 24/7 TBH)

Actually Gunslinger isn't all that useless especially when Fighting Cerberus, Nevan and those fallen Angels. Secondly I think Royal Guard does have its perks, but I only save it for a Boss who I know I can get close to and has a few Undodgeable attacks.
But I usually switch between Gunslinger, Quicksilver and SwordMaster
