Not an easy question, but I guess I'll go with Eureka Seven. I loved the charcter and mecha designs on it. The main characters constant whining got at some point pretty annoying, but apart from that it was pretty much exactly what I want to see when watching anime. Showy battles and a plot that doesn't require too much thinking.

I like my animes grounded in reality but with a twist of unrealism. Personally I loved Baccono, just because everything about it was done so well. I will give an honourable mention to FLCL though because I honestly didn't think I would like it at first but it used the things I hate about most animes in a way that made it impossible not to love.

In no particular order:

Hajime no Ippo (The Fighting in English, although the title totally means Beginning the Step and both refers to our protagonist's step-by-step growth as a boxer and is a pun on his name, Ippo Makanouchi).
Ghost in the Shell SAC (1 only, 2 was a bit disappointing)

Last Exile

Black Lagoon

Cowboy Bebop

Trigun

Black Blood Brothers (little young, but great villainess and good story)

Full Metal Alchemist, orig and Brotherhood

Samurai X OVAs 1,2 and 4

Claymore (though I long to fanedit the crap out of it, the story and characters scream for better direction)

Hellsing Ultimate

The Macross series has always had a special place in my heart. It was the first anime I ever watched (when it was adapted to Robotech and I was too young to realize how bad the dubbing was) and when I got older I realized that jets that turned into robots was somehow better when the robot didn't ***** and moan like Starscream.

I just wish the international copyright laws were a little less of a mess so we could finally get some official english releases of something newer than Macross Plus. Fansubs are fine, but I'd be willing to give these people my money if they'd let me.

Besides, none of the people who claim to own the copyright in the US really even care to do anything useful with them (...Harmony Gold thinks it does, but Harmony Gold would be wrong).

I would usually say Dragon Ball Z but I got the entire series recently and I have to say that it's not as good as I remember. I've fallen asleep while watching it several times.

At the moment, my favourite anime would be a toss up between Toradora, Midori no Hibi and Hayate no Gotoku.

Legend of the Galactic Heroes, the only Anime with less cliché and a Song of Ice and Fire-esque unpredictability.

Oh my god... So many anime's coming to mind ><
Cardcaptor Sakura: Cause it was the first anime I ever watched and holds a place in my heart.
FMA: Brotherhood: Didn't have a life for nearly a week while I was watching it cause I couldn't stop >< However I may be a little bias on this as I only watched it fairly recently. Though Soul Eater ate my life while I was watching that as well...
5 Centimeters per Second/ Spirited Away: Best movie.

In terms of actual quality it's CowBoy Bebop for me.

Though for sheer nostalgia factor and 'fun' its Tenchi Muyo,(the original ova's that is. Fuck Tenchi in Tokyo) it never took itself too seriously. I remember watching that coming home from school each day- god damn after school cartoons rocked back then. I also recently bought the Ultimate Edition and rewatched it all- fun times.(nostalgia is a powerful force)

In a similar vein to the above reasons for Tenchi Muyo Gundam Wing will always have a special place in my heart. Though I admit it's not very good.

Kino no tabi, realistic combat (within reason considering the heavily variable technology between countries), and all the special weaponry is easily explainable (arisaka sniper rifle that can have the firing mechanism and magazine replaced with that of a type 100 smg) and each story has a big twist and a lesson.
