Immediately, two things came to mind.

1. Shun-Goku-Satsu "ping!" noise from Street Fighter

2. The sound made when finally hitting your mark during the mining minigame in Final Fantasy XIV

...I couldn't find it on video, but basically, it's a sound like a mining pick striking rock, but it's a really meaty CRNGZCK sound when you hit what you're aiming for, and it's so damn satisfying.

I came here with a different one, but now I'm changing my vote to that! Thanks for reminding me of it.

Original response: the first that come to mind are either the squelching sound that oranges make when you slice them in Fruit Ninja or the sound of a portal opening on a wall in, well, Portal of course.

The sound of shooting the rocket launcher in the original doom/doom2... And the ensuing exploded corpse and sound it makes. Classic.

The *crunch* from the older Command & Conquer games, when you ran some poor sap over with a large vehicle. Still love it. I have gone back to the older games just to hear that sound again.

My absolute favourite has to be the squeaking of the pink toy squeaky mice in Dead Space 2. The most endearing sound ever in a setting that shouldn't be at all conducive to the existence of something endearing.

Of course, the weapon sounds from Half-Life 2 deserve a mention as well, particularly the shotgun and crossbow.

Most sounds from Dungeon Keeper 1. It's amazing how many effects are still being used today that originated in that game [particularly the 'bonus' torture level]

When you finish a campaign section on highest difficulty, that becomes the single most relaxing and rewarding sound in the world.

OT: Mine would probably have to be the sound of the Squad Cannon from Killzone 1. I bloody loved that game, dispite it's flaws, namely because it had both kickass combat and even more kickass weapons, and the Squad Cannon was the most kickass of them all for me.
Yeah Killzone was amazing and the squadcannon was great! I loved the sound of the reloading of the weapon more.
Oh man, don't even get me started on the awesome animations in that game. Reloading was just so realistic for a full on sci-fi game.
Also, special mention to the KZ1 minigun/rocket launcher combo weapon, with officially the best melee animation ever. :D
Yeah nothing beats playin Rico with a Minigun/anti tank RPG, running up to a Space Nazi and ramming the 100Pound minigun into his gigglezone and hearing him scream like Vader, especially when he comes up again and ram the side of your gun into their helmet. Best Melee ever, yes better than Jensons 2 person finishing moves, in Deus Ex (2011)!
