I'd start off as a wood elf that specializes in sneak, archery, lockpicking and speech. Hopefully I may be able to dabble in alchemy. I hope it's as fun as it sounds.

Hmm, what's the closest thing to Mass Effect's Adept?

Honestly, I know absolutely nothing about the game but some of my friends are practically shitting themselves over it, though I am in dire need of a good ol' RPG so Skyrim all the way (until ME3 and AC:Revelations(I get that at christmas(God I love my sister)) come out I will be sitting on Skyrim trying to at least partially grasp wtf I'm supposed to do in the main story arc)

Oooh I still haven't decided. I know I'm playing a girl, but I am torn between a khajit thief or perhaps an imperial or orc warrior.

Firstly, probably a male dark elf assassin. THey're usually quite funny. Then probably a male Khajit thief / agile warrior. Always a joy to run around your enemies.

Lastly (or just third, as far as I can really think of) a female Ork. Why? Cause if I remember correctly, the female orcs in Oblivion were more tanky compaired to the guys.

If I go any further, perhaps an Argonian / High elf mage. Not too keen on magic though.

I always decide what to play as my main game the first time I start up by going through each gender and race to see if anything catches my eye, but probably (by chance):
16% Dark Elf
21% Wood Elf
17% Khajit
20% Argonian
16% Orc
10% Other

or

Nord if there's cool face tattoos.

Probably go with stealth and either archery and destructive spells, or conjuration and sword skills.

On my playthrough of the actual storyline I'll make a Nord Warrior to try and fit the theme, but either before or after that I'll make a Dark Elf Assassin and join the Dark Brotherhood, like I end up doing every time I play Oblivion.

Which ever one is most like a human yet still reataining that stealthy goodness.
Because it just seems like the only good stealth characters are Khajit and Argonian...
I'm just looking for a good race to play as a stealthy vampire, because it's role-playing and role-playing as a khajit or argonian vampire SUCKED.

I can't imagine that it'll change much in the visuals department.

Wood Elves. Stuck through with them throughout Oblivion, and have never regretted it. Additionally, they've been the most persecuted and are lore-wise in a big comeback-period after having been ravaged at least once by literally every other sentient life form on Tamriel.

Male Argonian light armour, sword, archer, sneaker. I got a bit of a dynasty going from Morrowind, a proud history of stealing the best archer and being racist to Khajiits.

Exactly the same here, and Argonians make good archers. Not as terrific as the Bosmer, but still. Then I'll probably go Orc for shits and giggles. My third playthrough will probably be a tad more canonical, seeing as it makes slightly more sense for an Imperial to be Dragonborn. It sort of ties the whole thing with Oblivion, in how my dude is more than likely a distant descendant of Uriel Septim.

I'll eventually play as a Nord named Skwisgaar, though. Alduin is dildos.

Well, for serious characters, definitely a pure warrior and pure mage, probably Altmer for the mage, Nord or Redguard, maybe Orc if i feel like it, for the warrior. I don't particularly like thief/assassin characters, so I'll forgo those for the most part. I'll also do a custom mage/warrior hybrid, with some thief skills, mainly acrobatics, possibly sneak, with destruction and restoration, as well as long blade, shield/block/whatever it's called, and heavy armor. If i can fit that many major/minor (if they do that) skills in. I'll probably go with a Dunmer for that one. For joke characters, a fat (or muscular) old imperial who uses hand-to-hand, unarmored, and destruction, who sticks exclusively to fire spells, and prefers the flamethrower-type spells, named "Iroh", with his class being either "Master Firebender" or "Fire-lord". I also intend, if i have the time and inclination, to mod in a Chimer race so i can continue my tradition from Morrowind of playing aforementioned mage/warrior hybrid as a Chimer. And yes, i have put a lot of thought into this, how did you tell?

First I'll be a sneaky wood elf with a bow.
Which might be a problem if something see's me and starts running quite fast at me. Might need something to counter that.

If theres charater creation, whatever my girlfriend decides.

I can't be arsed to do any kind of charater creation in a game where I'm not going to look at the charater. (I know in TeS it actually changes some values to your charater) But she loves to do this kind of thing, I hate it, and I'll just play whatever suits the charater's traits and me best.
