I have a regular 60GB Xbox 360 right now, but I just won a 250gb 360 slim in a sweepstakes, i'm not sure which one I should keep and which I should sell. Besides hard drive size, is there any other notable differences between the models that make the newer version better?

The new ones have built-in wifi, and various internal changes which apparently lower the risk of blowing up/red ringing/etc. Also, they're much quieter.

The new ones apparently have "better" fans, though if your 60GB xbox hasn't blown up/melted down by now it's probably from one of the batches which are half decent. Don't underestimate that extra 200GB (almost) space though.

I'd recomend keeping the new one, keep your prize and think of the money you get from the old one as extra. If you sold the new one you get a little more but you don't get to keep your prize.
