I think Elfen Lied was the first, to be honest I didn't really care for it. I didn't give it a chance the first time, I watched the first episode then just sort of forgot about it.

I dug Elfen..never got to finish it though..wonder what ever happend?

Full Metal Panic, during the first semester of my freshman year of college. I just hadn't been interested in anime before that, and the gaming club got together every Friday to watch a few episodes of an anime every semester.

I'm still not much of a fan...I mean, I'll consider watching something if it's recommended to me, but I usually don't actively search for a new anime.

Can we count Kuroshitsuji. That's pretty mature in parts, and damn awesome. In fact, let's not even answer that question, it's an adult anime due to pure awesome.

Spirited Away was my first 'mature' film. I say mature because it's not so much compared with other Ghibli (hello Mononoke), but still good level of maturity.
