I'd say Fullmetal Alchemist (surprisingly dark in the later seasons...). If that doesn't count, probably Spice and Wolf.

It's a good anime, it shows how far humans will go against something they don't understand.

First one for me was probably The Cat Returns, if that counts.

I've just started watching Gunslinger Girl after someone recommended it on here. Must say, I'm loving it at the moment, the gold standard of arse kicking

Full Metal Panic, during the first semester of my freshman year of college. I just hadn't been interested in anime before that, and the gaming club got together every Friday to watch a few episodes of an anime every semester.

I'm still not much of a fan...I mean, I'll consider watching something if it's recommended to me, but I usually don't actively search for a new anime.

Can we count Kuroshitsuji. That's pretty mature in parts, and damn awesome. In fact, let's not even answer that question, it's an adult anime due to pure awesome. :p

Spirited Away was my first 'mature' film. I say mature because it's not so much compared with other Ghibli (hello Mononoke), but still good level of maturity. :)

If the description falls into one of the categories of seinen, yosei or mature, I think it was Escaflowne, I didn't get it at that time.
