Halo 3 is an excellent Co-Op game, if you are in the mood for comedy Castle Crashers is a must buy and, although many would disagree, Army of Two. Single player, it's crap, but with another person it is VERY fun.

Are you kidding? The number of options for cooperative play has done nothing but increase in recent memory.

Gears of War 2. Played it with my friend and girlfriend. Both of them played a shooter on the 360 for the first time but quickly got up to speed and it was a blast.

Seconded; Army of Two and Army of Two 40th Day.. Great Games. Get the first one first, (Duh) because the second assumes that you understand why the characters act the way they do.
