My all time favourite is going to be The Rite Of Spring by Igor Stravinsky. Mainly the first 7 minutes because of how the melody changes constantly but still connects in a way that doesn't break it, making it feel this scene music goes beyond just music. And the Sacrificial ending is really something you should once in your lifetime.

Currently, it's Wintersun's Sons of Winter and Stars, from the album Time I. I'd heard of them but I've only recently found and listened to the album and holy crap is it fantastic, definitely one of the best examples of symphonic metal and melodic death metal out there in my opinion.
When that last section hits and the chorus starts up... man, it just hits like a truck. Brilliant stuff.

Man, I love this song. It's not my favourite song every day though, it's a bit much of a headtrip to listen to all the time.

I do listen to a lot of songs so it has to be said, that position changes a lot. There's a group of songs I can always go back to though, songs that just astound me with their intensity and feeling, and right now the one that tends to get me most enthused is:

This is the album version of the song, but the live performance of it is so much more powerful. The crowd reaction when they pull someone up on stage to push the button to restart the song, and be "King for a day" is just very moving for me. Love these guys.
